Hey Chris. Just got around to watching this episode. I'm a fan for new gadgetry and equipment. It's fun to see channels get new stuff and show it to us. I would to grind my own meat as well as cut my own meat. The new slicer should serve you well for a long time to come. Look forward to seeing more, and the butchering process. We had a farm when I was in HS, but didn't live on it. We had all the farm animals, and I mean all. Had to go feed up every day. Was plans to build on it. Eventually did. During that time I had a hand in butchering some hogs and making sausage. My job to go shoot and drag around to the gutting stage, and boiling pot for scraping off the hair. lol back in the mid 60's. People need to know how to do that stuff. Enjoyed it.
PHIL IN FLORENCE Thanks Phil and glad your enjoyed the video. As for the hogs, yep, just like that. Only we hook em up to a tractor to take them over to the scalding tub. Don’t nobody wanna be dragging a 250+ hog down the hill. LOL I am really debating on that video. I wanna put it out but just have to be careful to do it tastefully and not get in trouble with YT. 😁
Not over the top at all! It seems that every time we get something that is too big or too fancy, ends up turning out to be the most practical and useful choice. I am sick of wasting money on cheap garbage that eventually breaks, right in the middle of a project. Good call on getting that one.
Another great vid...we have a slicer that is similar to your LEM. I agree, clean up sucks and it just doesn't do the job like a larger unit does. Now i want a bigger one. 😂😂
Thanks for the video. I started with a Cabela's "HD" slicer and after 5 uses it stripped the gears. Nothing HD about the ones from Cabela's. So I have been looking for a good one to slice bacon and raw beef/game for jerky. Your review helps. Now to have the wife watch it.
Great video! Would love to see a video on the cleaning and sanitizing of the slicer and did the cleaning system come with it or did you order separate? What was the name of the cleaning system? Thanks bro
Great video Very nice slicer you can never go to big The way i figure you need a slicer that size to slice Slabs of Bacon , Hams Roast beef, I have a slicer about the size of you're Lem, Its fine for small slabs of Bacon and sausage But I will definitely upgrade in the near future, Well done Enjoy your bacon ,Happy Holidays....Just Subscribed
That thing is a MONSTER! Do you cure your bacon?? I just cured some a few weeks ago and it came out so good that I'm making more. In fact I'll be smoking it tomorrow morning. I'm curious if it's possible to do without curing. Do you happen to know? Great video and hope to see your new toy in action in your up coming videos. Cheers
Rusty KC We do a wet brine/cure that does include a pink curing salt. Typically it is a 7 day brine and we are working with fresh pork that we process ourselves straight from a friend’s farm. I would have to look into not curing, but would think if you freeze what you are not eating right away and get it up to an internal temp of about 155 on the pit, you are probably ok but need to be “risk aware”. I would be very careful with what product I started with, for sure. Also, of note, not using a curing agent will make for a less crispy bacon, but with ours we usually cook it in the oven to serve and home made, fresh bacon typically just doesn’t get “crispy” like the store bought stuff, which is much higher in nitrates. A thinner slice helps, but we prefer a thicker bacon personally. We will have a video soon of the entire process.
@@AzraelsPitBBQ hey buddy, I got to thinking about your slice when I was hand cutting 2 pork bellies and had to watch this video again. Hows it going? Do you think you'll have time to make make some more videos? I'm still hoping to see the video in your last comment but understand that life happens. Cheers to you and your wife.
Rusty KC we are definitely going to get videos rolling again. It drives me nuts that we don’t have time to do the things we love, and we love cooking and making vids. Stay tuned and I promise new videos will start coming very soon!!!
POS Slicer compared to what exactly? You want to drop a comment like that, the least you can do is explain your position and offer alternatives. This slicer is MILES beyond any typical consumer "home slicer" that most folks would commonly have access to. This isn't meant to be compared against professional / commercial high end equipment. For the money, this slicer is fantastic. We probably use it more than most people would at home and haven't had a lick of problems with it.

This was a video I needed to see. My slicer crapped out and I have been looking for another one. 💪🏼👍🏼
MeatHead awesome. Glad it was useful MeatHead!
Wow. What a beautiful piece of machinery.
Looks like it work just the way you wanted it to.
Not a bad price. Hope to see more reviews of it. If you are willing to drop $500 + a bbq then this is worth it.

Great video! That’s a great friend to help out with the cost of the slicer.
Mama says it’s the right size then end of story it’s the right size!
Right?!?
Holy cow! I could drive that monster! Awesome!
Bologna Ring Ranch yeah, it’s a BEAST. LOL
Awesome slicer! I think you sold me on the 310!
River City BBQ sweet! The 310 was our original choice. Let me know if you get one and what you think. 😁

Azrael's Pit BBQ Great information, thank you very much. I can't wait for the video and I'm really loving your channel. Keep up the great videos.
