Hassa Curry || Cascadoo/Cascadura- Episode 69

  • The flavor from this famous freshwater fish is very distinct and makes for a delicious hassa curry. When cleaned and washed properly hassa is very "sweet" as Guyanese people like to say. I hope you enjoyed my recipe for Hassa Curry!

    Ingredients and Measurements:
    14-16 hassas
    1 tsp. granulated garlic
    1 tsp. black pepper
    2 tbsp. curry powder
    1 tbsp. masala
    1 tsp. ground geera
    1 small onion chopped
    10-12 cloves of garlic
    4 wiri wiri peppers (or any hot pepper of your choice)
    3 scallions chopped
    4 saijan (drumsticks)- OPTIONAL
    oil to fry the hassa and to cook the curry
    water
    salt

    I haven't had hassa in many years. This is a delicious fish, and I hope to try it sometime soon.

      Rakesh Persaud Of course! But you may want to mix the water and coconut milk. And add the coconut milk towards the end so that it doesnt curdle.

    season your meat first and leave it to marinade overnight. taste the difference after cooking. its a whole new flavor. seasoning meat while you cook it give a rank taste.

      My curry is never rank lol. Everyone does it a different way. As long as you have fresh meat/fresh ingredients you’re good to go. Thank you for sharing your method.

    Frying hassa 😏😏i have never seen that b 4 but washing it with salt and lime then wash off with warm water is what ppl does even me ....when you fry and curry it your are over cooking it and i put coconut milk in side

      Frying it is a must to get out the rankness. Give that method a try and you'll never go back. It doesn't overcook the hassa bc we dont leave the hassa to cook in the curry for too long. We add coconut milk only sometimes.

      @@matthewsguyanesecooking4601 frying is a.must for you ....id do it when i wash it with lime and salt and pour warm water all the rankness does come off it even get the same white colour when the warm water is poured on to it .....anyways that extra onion that you guys fry i always does that 👍👍

      I cook my hassa curry like yours but the only thing I do different i add potatoes and tomatoes and it taste very good..I never use Saijan .. Thanks Matthew..
