Sometimes the simplest of recipes are the best. But here, I would definitely add some thinly sliced celery to it, for a bit of a crunchy bite and taste pizzazz. (Those who don't like that, could use a bit of apple instead.) Would also mix some chopped chives through it and sprinkle some on top (instead of the parsley).
