I think I'd like to see a bit more of a difference between the bags, so like one person throws 6 speed and lower while the other throws 9 speed and higher. Or maybe even 5 and lower vs 10 and higher. But yes, putting with putters and using their own discs.
How about one person throws their normal disc off the tee and the other player has to throw a disc at least 2 speeds slower? That would show if they're trying to throw too much speed off the the tees. Rest of the hole could be normal.
I like this idea can make a series out of it go 1v14, 3v12, 5v9/10, 7v7, and so on till you hit the opposite that you started with. Take the average of every round to make it competitive. Would also be interesting to see what speed you both play the best and worst with.
I legit do Hunter's putting psych trick when I'm nervous about a putt. Stare it down from 15 ft further away, look down when you get to your lie, then look up and BAM you can see every atom in the chains.

The GStar Colossus is money. I have one that's fully beat in and I can't throw any other disc as far as that one. When it comes to Innova drivers, I find GStar plastic to be the most workable and easiest to get a full "S" flight.

Interesting idea for a challenge. 3 disc challenge BUT you use disc 1 ONLY on hole 1. Disc 2 ONLY on hole 2. Disc 3 ONLY on hole 3. Start over from disc 1. NOW a interesting idea as well would be to have your opponent(s) determine the order of your 3 discs. Another possibility is you cannot pick 2 of the same type of disc so only 1 putter, 1 mid, 1 fairway and/or 1 distance disc. This could be changed so you can't pick the same disc twice but it'd be boring if someone picked 3 mid ranges which would limit the damage on longer holes and could work on shorter holes still.

Simulair idee. Of you use Drivers only (distans and normal) +putter. Then a midrange+putter. For the issual idee at start of one of you taking it slow and the other goes balls to the wall aggresive
Do this again but use only actually slowest and fastest disc. Only Berg vs Nuke or Boss etc. (those have a rim width of 2.5mm which is in my knowledge the widest allowed).
