🥰SIMPLE. TASTY. BEAUTIFUL.🥰
LOBSTER RAVIOLI
Ingredients:
2 cups of flour
3 eggs
Olive oil
Salt
2 Lobster tails
Ricotta cheese
Garlic
Basil
Heavy cream
Tomato pasta
Shallot’s
Optional vodka for caramelizing
Lemon
Butter
Instructions: To make the dough, simply dump out the two cups of flour, and make a well in the middle. Drop in the 3 eggs. Using a fork, you want to slowly mix in the flour, and continue until you have a pile of crumbs. From there you can begin to use your hands to kneed it into a ball. I did some sort of “sqoosh and push” 😂. If it’s too dry, add some olive oil or water. If it’s too sticky and wet, add some more flour. Put the dough ball in the fridge for 30 mins.
For the filling, add some ricotta cheese, the chopped lobster (poach in a pan with some boiling water till the lobster is fully pink/orange), lemon zest, chopped garlic, salt and pepper. Mix together. Roll out the dough and use semolina flour to keep it from sticking to the surface. Place small chunks of the filling down on one sheet of dough and cover with another sheet of dough. Press around the filling with your fingers to tuck it in. Use a shaper or a knife to shape the ravioli. Cook until the raviolis rise to the surface of the boiling water.
For the sauce, add butter, melt it down, add the diced shallots, cook for two mins. Add in the vodka for some fun and flavor. Add tomato paste, then some heavy cream. Cook on low for a few mins. Add the ravioli into the sauce and toss it together with some pasta water and parmesan cheese.
