I go to the Global Table Adventure website for menu inspiration and what I don't have in my 7000 cookbooks, haha
Christmas dinner with ham, scalloped potatoes and other fix'ns. Or have an Italian feast with lasagna and a rustic crusty bread, etc. or how about New England pot roast with potato rolls, etc.
The food looked amazing! Love the idea of being outdoors surrounded by nature and cooking an entire Thanksgiving dinner 😊 Perhaps you could try something similar for Christmas...maybe brunch?

Great job! I have helped my son’s BSA troop do that same meal. We invited family and any Cub Scouts wanting to join our troop. It was always the weekend before Thanksgiving and we deep died turkeys, smoked turkeys, had Dutch oven dessert cook offs. In the mornings I cooked pancakes for a good 1.5 hours. Then we started in on the rest. Always a great time cooking outdoors!

I think food does taste better after you've been trying to cook it all day! Incredible feat!!! Hard enough to get all this on the table with a stove top and oven! Kudos! I already have my desserts planned out but that apple galette is tempting me! 😋

I haven’t written the recipes yet since I was just making it on the fly out there! For the mashed potatoes I used Yukon gold and then added lots of butter, a splash of whole milk, chives, salt and pepper to taste. They are so delicious and really easy! For the gravy, I used some of the fat from the chicken roast and a little butter with flour to make a roux. Then I added chicken broth, fresh thyme and rosemary, and salt and pepper to taste. Sorry I don’t have more detailed recipes on the blog like I normally do!

Back in the 1990’s, I tried to cook a chicken over a campfire. Epic failure. When camping, keep it super simple,e unless you are a master campfire cooker.
Why do you show no interest in a cooking table? It seems like you do a lot of prep at home before you camp which may explain it, but you do a lot of cooking. We noticed a small table and squatting. It just seemed odd that you seemed to have no use or desire for a camp kitchen table.
What do you challenge me to make next? Maybe we can turn this into a series… 😁
