I get the feeling that a big part of Hades 2 is going to be about Melinoe's reverence of Hecate. Unlike Zagreus who was rebelling against Hades, Melinoe basically hangs on Hecate's every word. It's part of the reason why Melinoe and Nemesis's relationship is so strained and I'm guessing it's also what Chaos is referring to.
Melinoe and Zagreus are basically Lisa and Bart Simpson: she’s the straight A’s student that’s on top of her class, he’s the misfit rebel that continuously gets into trouble. I just hope we get to experience their sibling dynamic during the game’s actual release

A massive massive contrast to Zagreus. Yeah Hades was strict but never actually forced anything on Zag. Zagreus talked about disliking his father last game, but this game (and Hades own history) really showcases how lucky Zagreus was to grow up in such a loving household and with the freedom to rebel with the worst consequences being sent back home (not like f***ING eaten). Then when he succeeded and brought Persephone back his family just got better.

Holding the head of their old appearance is so cool. The fact that Chaos speaks of being provoked is interesting, I wonder if they will play a bigger role in Hades 2, perhaps at the climax.

I think it's very subtle, but I don't think it's just Chaos' form that's changed but also their personality. Chaos in the first game was a bit more detached, and even a bit ignorant of "smaller" things and emotions that Zagreus helps them understand a bit better. In this game, it feels like their grasp of emotions is a bit more focused. They show more recognizable signs of things like spite, disappointment, regret, and longing. I think it's really interesting because it further fits the idea that Chaos is destroying its old self while simultaneously forming a new self thats obviously been affected by their interactions with Zagreus and Nyx and co, that new form being more "interpretable" to reflect that. just what I think though.
Chaos in the first game: "I am merely a distant observer of your world, but I kinda miss my daughter." Chaos after learning what Chronos did to Nyx: "I am slightly annoyed by this minor inconvenience..." *begins channeling the Big Bang as an opening attack directed to Chronos.*
Well it's the first time when we see Chaos sorta "pissed" at somebody, as pissed he may be. Judging from his very cold demeanor, the desire to intervent in the matters of the world is an indicator that something went really fucking off
Their baby (Nyx) and grandbabies (Zagreus, Hypnos, and Thanatos) have been taken Chaos LIVID especially since there isn’t much they can do to intervene
gotta say the new design has a lot going on (how fitting.) Chaos Itself looking like a scientist or suited businessman (nearly all the gods took on combat ready looks.) and what they hold is macabrely appropriate for the incarnation of primordiality. a skull and bony spine from what was their previous look from which sprouts an umbilical cord to a vaguely chaos looking foetus... (and i'd find it weirdly fitting if that little one was the one speaking when you talk to chaos, but still portraits don't lend themselves to that.) and surprisingly despite all that, they look significantly... cleaner... like Chronos getting free motivated them to pull themselves together more, and ditching a lot of appendages along the way.
Reconnecting with Nyx also probably had an affect. Keep in mind, Chaos seems to genuinely be considering breaking their neutrality because of what Chronos did to Nyx, and the Underworld in general, says a LOT
They really ate with Chaos, it may not have been the main motivation but the fact their new design is somewhat reminiscent of first game Demeter is crazy. Both parental figures holding onto a memory/symbol of their child. (Literal baby clutching Darkness coming out of their old head is way too specific + Demeter holding Persephone's ribbon) Demeter has found her daughter once and will give her all to not lose her again. Chaos through Zagreus became closer to their own kin, but eventually at a cost of having to experience losing them after. The fact their ever changing form is now more humanoid like the way Nyx chose to appear (regal/lots of jewelry when they previously had barely any) is probably their way of coping with that in their own way or showing off the impact reconnecting in Hades 1 had on them.
I really appreciate that even though Chaos is clearly absurdly powerful, it’s not to the point that there’s an immense power gap between Chaos and the rest of the gods, there’s still flaws to be found in Chaos, like being cold and distant from everyone due to their nature
