One thing we only had on rare occasions was store bought 'light bread'. It was a treat and to this day I'd as soon have a slice of Bunny Bread than a cookie. Of all the healthy old fashioned things I do, I will never go to healthy bread if I have an option out of nostalgia's sake. I do make up for this gap in my diet in many other ways.

This is my fave bread of all! I use Sue's recipe exactly but I do not add the lecithin or gluten. I use her olive oil she sells also and I think it makes a difference to me(seems softer). I use 2 cups hard red and 1 cup Kamut berries. I put the water, 2 cups flour and yeast in my Ankasrum mixer and mix, then cover for 20 min. Then I add the remaining ingredients and do all else same as you. (knead process takes the full 12 min or more to get to window pane). I roll out same way too!!! Adding in the cinnamon/butter combo is also sooooo delicious!!
I received my Nutrimill Artiste mixer last week and I love it. This video is just what I needed because I’m still not sure about how much flour to ‘add’ during the mixing process…your video helped me to know that I need to be more patient and not add more flour just because it seems so sticky 🤣…I’ll just be patient and let it keep mixing for a few more minutes. Thanks for all your videos.
i have the small bosch mixer , i love it , used it all the time for store bought unbleached white floure to make two loaves of bread and it was fine , but it struggles with whole grain flour ,so i am getting adifferent mixer so i can do heavy dough
I would love to see the grain mills you use again. Also, the type of wheat berries you use. Seems like you did a comparison type video. I have the old bread Becker's cookbook. I ordered my grinder and tortilla press, I can't remember what all from them. My grinder finally died after years and two moves lol. I need to get another one. I miss the fresh wheat bread.
This is my go to recipe! I do add my own spin slightly. We don’t eat animal products in our home so I omit the egg. Lately I have been using all hard red and it has a beautiful flavor. I always double the recipe! After adding the initial flour, I mix until just moistened and let it set for 20-30 minutes then add the yeast and the rest of the flour ( just enough for the dough to clean the sides)then I knead on speed 1 of my Bosch Universal for 8 minutes. The loaves are perfect every time. Oh, and I don’t use honey but the same amount of sucanat

Yes. My grinder died and I've made it with bread flour and white unbleached flour. I always adjust the amount of flour " by feel" anyway because we are very humid here.
LOVE your channel! do you have a measurement of how many wheat berries you milled to get the 4 1/2-5 cups of flour? i’m use to using weight in my recipes and so that’s easy to figure out but figuring cups is different. thank you!!

I just find it more convenient to thaw and just pull the slices from the bag.

You should be able to. Just add enough flour to make a workable dough.

The method I use is 2/3 cup berries is 1 cup flour.

Hey Mary, I make this bread regularly and it always seems the deflate on the sides on me. Any suggestions on what is causing it?
It may be over proofing. Catch it a bit earlier next time and see if that fixes it.

Thank you! I like a mixture of hard white, hard red, and Kamut. Usually half hard white, a quarter each of hard red and Kamut.
