INGREDIENTS
1lb (450 g) ground chicken
2 tablespoons Shaoxing wine (or dry sherry)
2 teaspoons soy sauce
1/2 teaspoon brown sugar
1/4 teaspoon white pepper
1/4 yellow onion, minced
1/2 carrot, minced
2 garlic, minced
1 egg
1 cup panko breadcrumbs (or regular breadcrumbs)
Fry:
1 tablespoon vegetable oil
1/4 yellow onion, chopped
1 bell pepper, chopped
Sauce:
3 tablespoons ketchup, sriracha, and/or chili garlic sauce
3 tablespoons rice vinegar
2 tablespoons Shaoxing wine (or dry sherry)
2 tablespoons soy sauce
3 tablespoons brown sugar
4 tablespoons water
1 clove garlic, grated
2 tablespoons cornstarch

We saw this recipe in an email from your blog. We loved it. Followed instructions exactly but added birds eye peppers bc we like things spicy. This is the 3rd recipe we have made from you. All of them were great. I was never able to make Chinese Eggplant dishes that were very good. Your 红烧茄子 Chinese Eggplant with Garlic Sauce gets tons of compliments.

I noticed how sharp your knives are. What make are they and what do you use to sharpen them?
The knife is from Miyabi (Japanese maker) and we use Japanese water stones to sharpen our knives.

They also have knife sharpening service where you send in the knives and they sharpen them for you.
