    so from a man who actually have eaten this chicken, this chicken is undoubtedly one of my favorite chicken! i work in a restaurant in the same neighborhood so after work we always go for late night chicken and this is always the place we go! also very surprised to see this place here i was like what hyodo came out in youtube? lol

    Loved how they gave a reason for why they do certain steps the way they do. They didn't just say they use a double fry method, but they explained why too. Very informative video.

    Chef Kang Min Goo of MIngles and Chef Chango are one of the chefs I look up to very very much. I've seen this chicken being praised in instagram but I had no idea that they were the chefs behind that creation! Maximum respect to the chefs for always trying to widen their spectrum and always trying new things for the purpose of providing delicious food to people, regardless of it being in the form of michelin star fine dining cuisine or a dish as humble as fried chicken.

    I live in the South of US. I've had some of the best friend chicken....Until I tried Korean fried chicken. I also had Korean Bbq which is also a staple method in the south of US. Bravo Korean people. Your fried chicken and bbq is absolutely delicious.

    I can help noticing the translation. Mostly great except for “meat” flavor is not the most appropriate translation of their intention. It’s more akin to having an off putting raw flavor or gameyness, although that’s not accurate either.

      Thanks for this, it struck me as odd too. It's something I've noticed watching videos about East Asian chefs, they put a lot of emphasis on removing smells, specifically the smell of raw meat. It's interesting and not something we tend to think about or at least talk about in western cooking

      How do you know when your never been to every place in the world ? Go to America to places like Louisiana and Mississippi away from popular fast food restaurants and you will see. Caging fried chicken and Spanish fried rice will change your life .

      The domestication of chickens was a godsend, about 5,400 years ago in Southeast Asia as well as ancient Persia, Egypt and Greece.
      It ate bugs & snails around the yard, laid large eggs every day, and are yummy as heck.

    I find it so humbling that both of them are Michelin-starred chefs. They could choose to open a pricey fancy restaurant, yet they choose to perfect fried chicken.

    As a chef and owner of a few chicken shops which are regarded to be some of the best fried chicken in the world.

      I can tell you the food on the street is better than most restaurants in America and affordable. I was there near two years. Came back and had a corn dog and was in a bathroom in 20 minutes. Preservatives or at least chemical made ones are not over there. If it is its in random packaged stuff. Most everything is made fresh or a fermentation process. Its amazing... America needs to get its act together on food. Processed stuff needs to be less available.

    KoChix in DC was the first place I had Korean fried chicken, if I still lived there I would go once a week. It was the best chicken I’ve ever eaten.

    I used to live near hyodo chicken. That place is packed even on weekdays and usually I had to wait for minimum one hour. But I always waited anyway cause thats just what it takes to get the best chicken in Seoul... 😏

    What is "grain syrup"? I'm not finding a straight-forward answer online. Could be rice syrup, corn syrup, or a malt syrup.

      They use Jochung, a kind of Korean rice syrup.

      Its called jo-chung, a Korean syrup made from rice or barley. It'll only taste right if you use the ones unadulterated by corn syrup, which is what a lot of cheaper manufacturers do in addition to artificially adding the brown color.

      My guess is that it's rice syrup since they refer to it as jocheong, which to me normally means rice syrup. Also, it has less sugar, which is why he says it's "healthier" at 6:38.

    When you find out Korean fried chicken only came about in the 1950s when American soldiers (mostly African American) based in South Korea during the Korean War introduced it to the culture 🤯

      furthermore, grain subsidies from america after the korean war gave korea the feed supply chain to actually farm chickens at mass scale (so we could fry them, clearly)
