From the artist side of things, If artist negotiated a flat fee upfront How do they own the full beat and recording from the producer where they get all the publishing, royalty and 100 profit from the whole song ?

Australia works heavy with the US. So , as long as you have an APRA AMCOS account they will collect your Performance & Mechanical roaylties. However, those don't have anything to do with the label and you will have to collect your producer points directly from the label.

It all depends on the situation. However in 99% of cases producers do have to pay the advances back.
