Really looking forward to this. I love going out to the garden to get the bits and pieces- chilli, coriander, mint, lemon, parsley. I added some lemon zest and a small amount of parsley to the paste because my wife doesn't like coriander....I'm using chicken thighs skin on, bone in. I can see the balance of flavours can really work with the spice mix :-)

How do you manage to get such beautiful pink pieces of chicken meat with no fat at all ? I think you are using small chicken correct? any tips on trimming fat and skin?
