Hi and that’s a great question. I personally wouldn’t only because when you thaw something you are inviting bacteria. Normally you would either bake or cook the fruit after thawing and in this cause you are doing neither, so for those reasons alone I wouldn’t.
LOL, Thanks for stopping by. I've been there so I get it. I think it's more for convenience that people pit their cherries. I mean you don't want everyone shooting pits around unless, of course, you are making a game out of it lol. If you are just making a few jars just for yourself, or a lot of jars, I would mark them accordingly. Just like olives you would have pit and pitted. Oh, if you do leave the pit in you may have to poke a hole in the cherries with a clean needle cause they may split in the jars when you put them in a water bath. Another option is to freeze them, and this way you can take a few out at a time. Let me know how it works out. 😊
The hard stone in the center of cherries is full of prussic acid, also known as cyanide, which is poisonous. But there's no need to freak out if you accidentally swallow one -- intact pits just pass through your system and out the other end. Avoid crunching or crushing pits as you nosh on your cherries.

Do I HAVE to pit them? I want to preserve them but I really enjoy removing the lit as I eat them (I'm quitting smoking and it's oddly satisfying 😂)
