    I'm a big lover of potato salad! Over time, I started mixing the mayo with equal parts vinegar and sugar [a couple of spoonfuls]....this makes the dressing easier to blend into the salad and it keeps the tangy/sweet taste of the mayo. Thanks!

    relish or corn relish is good also. I'm brand new to my instant pot, and I've just cooked mashed potatoes (no drain), and now I'm cooking a frozen steak. Flo, I've watched your smashed potatoes and now this potatoe salad, and I'm salivating. Thanks. I'm a UA-cam watcher but have never subscribed to a channel. I think that may change.

    I too put shrimp in my potato salad. I also shred carrot the same way as you do when I don’t need much.

    I grew up with home grown eggs and my mother always explained that fresh eggs won't peel. So for peeling eggs, hold back a dozen and let them age a bit before preparing.

      +Kim X Yep... been there done that. Eggs just don't like to peel for me. 🙁 But it doesn't matter now that I pressure cook them! 😊

    You might try adding some sweetened cider vinegar to the potatoes while they are hot, maybe about a half cup or so. (A nice rice wine vinegar would work also) It adds a nice mellow background flavor, a good counter to the salty bacon.

    Ive got my potatoes in the instant pot and eggs on a steamer. Chopped the celery and scallions. Bacon is cooked (in the microwave) ill pass on the shrimp. I only did 3 russet potatoes. I needed to use the potatoes as they were starting to sprout. Good time to try your recipe. Ive made so many of your dishes. Did the Hainanese Chicken last week. Loved it all but the skin. Your formula of weight x 5.5 is just perfect! Thanks so much for that. I do your ribs every couple of weeks with my bourbon bbq sauce. Back to the kitchen now.

    Great idea with the carrot. I typically cut them into match sticks. Thi sis much easier. Thanks for the tip.
    I put my veggies and seasonings into my dressio=ng. Put it in the fridge for a half hour. Then add it to my potato salad. That was the way I was taught...LOL

    Looks good , you may wAnt to consider separating the cooked Yokes from the eggs , chopped the whites and smash the yokes in a separate bowl and add yellow mustard , 1/4 cup of mayo rather than 1 cup , and Cajun seasoning would go great with the shrimp , at little sweet relish to your potatoes and mix everything, refrigerate 4 hours the flavours will mingle better

    I'm still watching, but heard you say you're afraid about cleaning the metal piece that gets stuck (I forget what it's called lol) but I wanted to let you know there is a great video in the facebook group if you're in it, about how to take the lid apart to clean. The little box thing under the lid pops off and there is a small piece that holds the metal piece in place. Just wash in hot soapy water. When I do pasta or steel cut oats I take it apart because the starch can clog it. Hope that makes sense!!

      ahh, yea me, too!! lol! i washed the pieces and put them in a little cup to dry and then kept checking the cup to make sure the pieces were still there lol!! things disappear quick around here (an almost 2 year old likes to play!)

    Creative and delicious dish! How ingenious to cook the potato chunks along with the eggs!! Thank you for sharing that idea with us. When you added the bacon, my cute ten year old daughter said, "I LOVE that lady!" Being that it's Lent, I think we will be making this KILLER POTATO SALAD for next Friday's dish of fish sandwiches and white beans (except, I'll have to omit the bacon and use vegan bacon chips, hmm.., maybe that's a bad idea). We are in Louisiana so seafood is very plentiful here! We'll probably add a few dashes of Tabasco, too (another Louisiana staple down here). On second thought, I'm going to the grocery store tomorrow and will make this tomorrow! Thank you, Ms. Lum!!

      It was delicious!! We made it Sunday and served it with pot roast. Cool idea to cook eggs and potatoes together!!! This recipe is a keeper. We got the smallest shrimp we could find at the grocery store. My husband really enjoyed this dish. Thank you.

    Love your vids. I am not a SMART user, I would actually prefer the pressure cooker to be analog with a dial :^) ... If I have to get the 8 year old kid across the street to show me how it works this week, I don't probably want it.
    I Love the Baby Shrimp! Bacon and Baby Shrimp (we could probably stop right there and nix the potatoes and eggs but then it wouldn't be Potato Salad)
    I was drooling at seeing the finished product and immediately grabbed my Black Pepper and Smoked Paprika to sop up the drool.

    do you cut back on your seasonings for the pressure cooker what do you use the same amount that you would with other cooking methods?

    What is the smaller pot that you sometimes use for the pot in pot method? You put the eggs in a cold water bath in it in this video

      +Kimberly Wainwright It's just a stainless steel mixing bowl. I go them in a nesting set of 4. This is the only one that fits in my pot.

      Thanks so much, Debbie! Unfortunately, I just don't have the capacity to even type out the recipes anymore as I want to focus my time on producing more videos for you guys. The potato salad was on my blog and then it got hacked! I'm trying to be as detailed as possible on the videos.

      I was going to tease you and say any boy friend that can't eat shellfish may not be worth having, LoL but then I remember my best friend was also highly allergic to shellfish so it's a real thing. I surmise it may be the iodine it in but that is just a guess. As for me, I absolutely love shellfish and even fish without shells, LOL.. So, make two batches one for you and one for him, or like our hostess said, set his share aside (about 1/4 cup) then add shrimp to your share (the rest of it) LoL...

    Maybe it's the Southern girl in me but I always mix my salads (any) with my extremely scrubbed hands! Especially potato salad, it keeps the potatoes from breaking down a lot!

      I sometimes add 'chopped' lobster or crab meat to my potato salads so adding shrimp sounds like my kind of salad - 'heck' (lol) - I've even added roasted diced turkey (leftover from Thanksgiving) but only once. It wasn't that big-of-a-hit or,in other words,"it went over like a lead balloon"!! Haha! I've also never made a potato salad with pieces of potato quite that large. I cook my potatoes whole and dice them after they're cooked/tender & cooled - about 2 cm. cubes/pieces or even a little smaller. I also dice my cooked eggs about the same size,as well.This was how my mother,maternal aunt & maternal grandmother made potato salads. We learn from our elders,right? ;-) 'We' also never use mayonnaise - we/I find mayo a little too "sour"...I use Miracle Whip.
      I also add 1 tsp. or up to 1 Tblsp. sugar (depending on the amount of salad I'm making) a little raw onion (*finely* chopped or minced with my micro-plane),a small can of peas & carrots but if I have left-over carrots from a meal the day before,I will finely chop those and add them. Also finely diced celery,if I have any on hand. There isn't much that can't add to a potato salad! :-D

      that sounds so good I also add mustard with my miracle whip ..mix it together before mixing into it ...try it you will be surprise ...try
      2 tablespoons ..taste if enough

      @@1genevieve2 I'm not a mayo fan but MW imho is too sweet. I experimented and found half may and half sour cream is delicious. Also the sour cream makes it a lighter kind of creamy.

    Love the recipe until the baby shrimp, I know I can leave it out, so that's what I will do, and I am totally gkad you peeled the potatoes, most ppl leave the skin's on and they don't realize that potatoes are a root vegie and grown in dirty dirt, and even if you wash them, look at the water after cooking, and the crevices in the potatoes hold bacteria. just can't stand potato peeling's. love the rest of your video. great job
