I am originally from Buffalo NY so I am extremely excited about trying this out next year's Superbowl party. Will use cottontail rabbits. I learned how to make pulled meat sandwiches with cottontails from another UA-camr.
Man, i have made this twice now the first time was tougher than all hell but tasted good. 2nd time after soaking it in buttermilk overnight it was slightly more tender and easier to come off the bone but ya still had to get pretty Neanderthal-ish with it to get it off the bone. Any tips on how to make em not so tough?
Honestly, it seems like the second fry is a flash one to crisp. The meats mostly cooked after 4 to 8 minutes. The first fry cooks it. The second crisps it. Leaving it too long will just shrink and burn it.
Do you think it would be ok to pressure cook for a short time to tenderize the rear hams or would that change the texture too much? Just curious if it would be too tough for young kids to gnaw on.
I've done exactly this with squirrels and it turns out great. I use my instant pot, and hit them for 25 minutes at high pressure, fast release. They come out quite tender, then I pan fry. You can pressure cook more or less depending on how tender you want your "wings"

These were incredibly tough to eat. Maybe he likes them like this, but I personally think I will boil the meat first next time before hand to tenderize the meat.

If I may, the best way I've found to make buffalo sauce is to do franks + butter + black pepper and let it reduce until it stops separating.

Was looking for same....I've heard frying for a loooooong time or baking after frying. Havent tried yet. I can say that a slow cooker works wonders.
Brian Cook I haven’t tried it yet but I may toss em in the insta pot/pressure cooker for a bit first then deep fry em or vice versa.

So I sous vide them for several hours the other day at 155° before the frying process. Tenderness was on point fyi
