They new tiny variety called honeynut squash has extremely soft edible skin, but I've never tried butternut skin. Thanks for these recipes, I think I'll try them with the honeynuts I have! I highly recommend trying them if you can get your hands on some. :)
Would acorn squash work in any of these recipes? My grocery store was running a sale, so I bought some, and then remembered I've never had it before! haha
Honestly unless it is a really thick variety of skin, I rarely peel any squash. It feels wasteful to me (and often the skin feels like it adds a lot of flavour). I think it also helps the pieces stay in shape if you are cooking it for a long time in a curry for example
I don't eat the skin. But I don't peel it I cook it, and scrape it out. It's easier. I've eaten the skin before, I don't really like it when its steamed or boiled which is how i normally cook things i dont use the oven much. , I do like the skin on some other squashes like kabocha, kuri, summer squashes, delecata.
I never thought to use apple in my butternut squash soup before, but now I will have to try it! My family is a little squeamish around squash with an often complaint being that they are on the sweet side, or that they are bothered by the texture. The only squash that I've gotten them to admit they like so far is spaghetti squash. If anyone has recommendations for tempting the squash-averse folks with something we may not have tried, please leave a reply!
I’m from the UK and I eat the butternut squash skin, just out of convenience. If you’re roasting/blending the squash to make sauce or a soup, the skin will just disappear 😁

I never peel the squash because I am lazy too but it would also remove some of the nutrients because a lot of nutrients are in the skin.
What about some things with celeriac??
