I can’t begin to explain how frustratingly finicky the dough can be when rolling it out with the butter block inside, but your videos really make things look easy! The croissants don’t look like they had any issues rising with the eggs wash on the cut sides. Love your work!

Watching french people fight to the death over whether calling this a pain au chocolat or a chocalatine is a sport as old as time.
Hey at least we can all band together against the foreign hordes who call it croissant aux chocolat (even if technically it is the more fitting name and closest to what it is, form factor aside but shhhhh, it's not about being correct, it's about pointless semantics :p )
There's even some regions in France where they call "pain au chocolat" "croissant au chocolat", but still make them rectangles XD

Regardless how does the chocolate not melt? Is it like a type with little to no milk or butter? Basically just compressed cocoa?
@@woodycoat That's an interesting question, all french recipes ask you to just use regular chocolate bars ^^'
My bet would be that it does melt in the dough, but is keep in place by it and then resolidify while cooling....
When I went to France with my family when i was younger we had this bakery that was below our hotel and every morning for breakfast I would get a chocolate crossiant, it was probably the most delicious piece of food i've had to this day, and i had it every day for probably a week. A close second would be stroopwaffles (I don't know if there's a weird spelling or not) that I got hot and fresh in Amsterdam, the cold and stacked storebought versions don't do them justice.
Oh gosh fresh stroopwaffel from the markthall in Rotterdam was great.

Tbf this comment just gave memories of a different kind. I went to Madrid a few years ago and across the road from my hotel was a bakery selling these crazy delicious and crazy massive pan au chocolat
Let's talk about "Pain au Chocolat" in France : very tough subject.
Basically, what we see in the video is a "Croissant au Chocolat" not exactly the same thing as the well know pain au chocolat, that is not folded as a croissant (as we can see further in the video, and they look awesome !).
France is divided between two areas, South-West that calls it "Chocolatine" and the rest that calls it "Pain au Chocolat" : its a very well know little joke-like war between these areas. This joke is sometimes too intense as some people can take it too seriously.
There is a lot of others designations in some regions and I let my comrades tell you what they are.

I believe in the synonyme way. For me both forms are acceptable (I still prefer chocolatine but I don't mind asking a pain au chocolat when I'm in a bakery outside of the south West of France)

I'd love to see the team tackle Panettone and/or Pandoro. They're fantastic Italian sweet breads, but most local US bakeries don't make them, so you either have to make it yourself or order it online. You can sometimes find the Bauducco brand in stores, but it's usually sold out.

Interesting you don't see them in America. In the UK seemingly every supermarket has them at Christmas time. Including a confounding parmesan and black pepper one in a high end shop I saw this year
Fun fact, but when I worked at Starbucks there was a weird day when the entire system was in French. The register decided to pick a side and decide on "chocolatine" for this pastry. It's a dialectal thing, but ya know, France, so kind of a war.
After watching that movie I had to make these. Using store bought croissant dough and a chocolate bar cut up into slivers, just add some chocolate before rolling. They came out great.
That is one of my favorite movies. So happy you made true chocolatines…what pain au chocolat is called in my part of France.

I love your croissant dough. You made it beautifully, and they came out wonderfully flaky. However, I can't help feeling like your chocolate croissant is lacking in the chocolate department. In Montreal, we spread finely chopped dark chocolate over the equilateral triangles before rolling them, to give a better chocolate-to-dough ratio, as well as a delightful swirl throughout.
Your chocolatines are far better
These are movie-accurate, but if I were to make at home, I would want more chocolate for my troubles. Keep being awesome Babish Team, and thanks for the enthralling videos.

If you're making them for kids, I would suggest mini chocolate (or other flavored) chips; and if you're making them for dark chocolate fans, I would recommend a mix of shaved, semi-sweet and unsweetened Baker's chocolate. Either way, a thin layer on the dough BEFORE rolling them will give you wonderful spiral. Best of luck, and enjoy!

croissants, chocolate or otherwise, are something always best left to a professional imo. i had a little bakery/deli place next to my high school where id get a filled croissant every morinng, often with raspberry or apricot jam inside. after an hour and a half commute that really got me ready for the day!

i learned a neat trick in paris where with the excess dough you cut off, you can dip it in an egg wash, cover with a sugar/cinnamon mix, roll up, then bake to create some cinnamon roll snacks!!

My expert french opinion is that this is pretty nice it looks quite faithful to what we have here only exception being the chocolate, it's softer than what you have here and when they are just out of the oven the chocolate is starting to melt so i don't know if it's the chocolate itself that is not the right kind or perhaps they need more cooking time at a lower temp

It would also be a great time to do this since Omori just came out on Switch. Here is my personal take on each character and each of their sandwiches.

I know this sounds counter productive to croissant making but I would have thought adding shaved or chopped chocolate to the croissant butter then add the compound butter to the dough would make the croissants have layers of chocolate flavor instead of just one single spot.
