I’ve been seriously wondering about the best way to glue these large body pieces together along with a top lately... doing my own bodies and necks seemed like the next logical step in my journey. Interesting set up, i wonder why they dont have you cut a slight bow in the boards to add additional pressure in the center as the traditional ones do.

No reason you couldn't except that if the bow isn't cut precisely and the clamping pressure the exact same on both sides and with both clamps, you could end up with bad results.

These look great. Can you remove the top beam sto make it easy to put the boards in place, then simply replace them? I think I need to get a set.

Yes, you can, but it's still a bit fussy.
