Search in combat to find most of them, the hidden characters require certain story triggers then searching specific spots in towns that previously said "nothing found". I dont remember all of them but somebody probably has a guide now that the internet is older and more popular than when these games released.

Did you miss the secret party members, or just didn't like them? There is a samurai and ninja, a gamera/godzilla like kaiju, etc.

Yeah, some battle maps also have hidden items like bikinis for female party members, an egg that you hatch the kaiju from, etc.
