You impressed my Singaporean raised hubby!.We made these tonight in northern CA. He remembers helping his Mom pound the fish by hand and I was only the back up with the broth and noodles. They came out so light and fluffy, I never tasted fish balls like this when I was working in Hong Kong YUM! Thank you! So authentic.
I've been a Chef for 30 years, working in both European and Asian cuisines, and that was a serious soup stock you made there my friend. Amazing attention to detail.
I know some Malaysians always comment that Singaporean couldn't make nice food but I am glad that I found this channel to proof them wrong. I admire your hard work and authentic recipe
Wow, I was just talking to my dad last night and telling him that even though I cook regularly, I am clueless about my own cultural cuisine - my family is from Singapore but I was raised overseas. So glad I found this channel!
Nostalgia, my grandma used to make fish-balls too but those days, she didn't have the luxury of a magic mix so it was even harder work... my favorite part was when she squeeze the fish meat through her fingers and scoop a ball from hand onto a basin of water... as a child, I used to watch in fascination ... thank you! It was a good revision on how to make fish-balls and it brought back beautiful memories of my grandma too!
Hi today I will be cooking fish ball Mee soup. I have bought the fish balls n fish cake and I m going to use chicken meat. I'll try n follow your cooking method and I m confident that it will turn out good. I m really inspired by your cooking methods and have tried few of your recipes all turned out good. Thanks for sharing happy cooking 😊
I just recently discovered this in a hawker center and I liked this so much! My kids love this noodle soup too! I'll try this at home for sure! Thanks again
Evening tks Roland, for the recipe.. and thank you Jamie 😊 for alws giving us the clear video appreciate the hard work .. Once again tks .. Will try out tomorrow.. Good night both🌙.
Roland, there are 2 types of Spanish lkeral. 1 it what we cook curry with, the other species is broader and flatter. These are used to make fish balls as they have a lot of KAU ( so called glue). Next when scraping or cutting these fish for fish balls, ALWAYS have a bowl of salt water on stand by to dip the spoon or knife in so there is no wastage of fish as the flesh will not adhere to them due to the salt.
Looks delicious. I just bought fish balls for the first time and l am looking forward to having. Thank you for helping. Going to try first myself and then do in a mukbang.
10:58 so cute Jack Russel dog u guys have😇 Wow Chef u make ur own fishball👏👏 We love ur stock,We separately the noodle and the soup, once u want to eat then heat the wok and scoop the stock add the mince meat ,fishball and the noodle..I make it fr breaking fast, yummy🤤yummy🤤 Thanks again fr ur recipe chef🙏👍 16:34 what the Chef say is 💯% correct,Why outside soup taste like a Hot water/tap water!!?? Yes even malay stall also same,Chef..that’s why me n my mum love to cook at home..
You added your condiments at the end, ie your chopped shallots and chopped chilli, loved the process, though a bit long in preparing, the end your taste buds were famished. One of your better recipes.
Good work and thanks for sharing I’m excited to make those fish balls . I can never get any good ones here in Australia I’m so glad that I’ve found your Chanel.

9:23 That lovely tail distracted my concentration. 😍 Thank you for the recipe and the perfect explanation, Sir. I like your channel, really helpful for me.
Happy cooking!! We love this too. Sometimes when we’re too lazy, we just buy ready made fishballs and then make a big pot of soup to last us for the whole day. Yum!
Always following and loving your videos! Thanks Spice N' Pans. You have come so far in your videos! =) And glad to see the man behind the voice too! Haha... Keep it up!
That's a very good good soup stock.Thank you! Could you demonstrate how to make hir kiaw - the dumpling that you find in some dry noodles sold in Singapore.
I am so glad i found this recipe, kuey teow and noodle fishball soup is my favourite but i know live in Europe and won t be able to have it easily. Will try your recipe. I have anchovies but please tell me what other fish I can replace dried sole fish with for the stock. Thank You
Hi Geok Lian. So sorry for our late reply. If you can’t find sole fish then no problem. Omit it anchovies should be enough to make this dish really flavourful. Happy cooking!
Wow! That looked lovely. Would like to try this someday, but I know I will never make it as it looked like a lot of work. :( Good vid. Thank you for sharing.
Wow all that hard work, Roland will definitely be hungry that's why he is eating such a big portion haha. Jamie, I hope you get to eat at the same time as Roland and not be behind the cam shooting first!
u can grind the ikan bilis into powder form n boil it the taste will still be there most important u still can drink it...will not watse the ikan bilis since ikan bilis is very expensive nowadays.
true, that's what I've been telling Roland too. I must remind him again the next time he uses ikan bilis to make soup. Thanks for the reminder, Liu Min :)))
Hi chef Roland, I was born and raised in Singapore and fishballs with noodles was one of my favourite dish but now that I live in Switzerland, i can only get frozen ones! Would love to try out your recipe !! One question-- what can i replace chicken feet with for making soup-- chicken bones??Thank You!
Hope you’ll enjoy this freshly cooked in Switzerland 🤓 Switzerland‘s view plus Singapore food. Awesome!! yes you can use chicken bones. Happy cooking!!
Hi Jamie and Roland, the link to buy similar pan by la gourmet that you guys use on the video is not working. When i click it, it brings me to a site shown in portuguese language. Please check, thanks.
Opps. Thanks so much for letting me know. I’ve updated it. You can buy from courts but look out for the promotion at Tangs/Robinsons etc. Sometimes the promotion is really good. Happy shopping!

Hi Jennifer. You can replace it with plain flour in the same amount. Just note that the fishballs may not be as springy but shouldn’t be much of a problem. Happy cooking!
Hello I used frozen thawed fish and got as much water out and followed the instructions but it was way to wet any suggestions or Twix to your recipe that I can use frozen fish instead of fresh I would like to hear from you if I can use frozen fish maybe omitting all the water that you added I don't know please help
Hihi. Yes that should be fine. Try not add any water in and remove any water if you see a lot of it after you have minced the fish. You may also add slightly more flour - not too much though. Hope this helps
Hi Rolf. I just asked Roland. He said this fish has more fats so they are not very suitable to be used to make fishballs. You can go for cheap white fish that’s not too oily. Hope this helps.
Do you rinse the yellow noodles before boiling it in the stock? Otherwise it'll have the "kee" taste from the noodles which might leak into the precious hardwork soup.

Hi! Am i able to use dried sole fish insyead of mackerel bones since i'm not planning to make the fishballs from scratch?

Terima kasih Yohanes!
Can salmon bones be used instead? Appreciate your expertise.
Great
Thank you so much!
Can I freeze the fish balls? I loved the video! thank you for sharing! I'm excited to make it.
Yes you can. Happy cooking, Ellen!
Luckily frozen cooked fishballs taste good and keep their bouncy texture when boiled. This is the only kind of fishball I can buy.
What did you do with the chicken feet and anchovy after boiling?
If I use basa fillets, do I need to adjust the ingredients please?
Hi chef Roland, I was born and raised in Singapore and fishballs with noodles was one of my favourite dish but now that I live in Switzerland, i can only get frozen ones! Would love to try out your recipe !! One question-- what can i replace chicken feet with for making soup-- chicken bones??Thank You!
Hope you’ll enjoy this freshly cooked in Switzerland 🤓 Switzerland‘s view plus Singapore food. Awesome!! yes you can use chicken bones. Happy cooking!!
Hi ! I really love teochew fishball soup but never knew it uses chicken feet for soup base. Is there an alternative? Thanks.
Can u add scallion or garlic to the fish mix and what can i use if i dont have wheat flour
Hi. Can I use frozen basa fillet? Instead of soup, can I fry them?
Yummy!
How long can we keep boiled broth in fridge if we make more and keep some for next use?
looks super sedap!
Heee thank you so much
Hi if we don't have wheat flour what is the next substitute pls
Hi Jamie and Roland, the link to buy similar pan by la gourmet that you guys use on the video is not working. When i click it, it brings me to a site shown in portuguese language. Please check, thanks.
Opps. Thanks so much for letting me know. I’ve updated it. You can buy from courts but look out for the promotion at Tangs/Robinsons etc. Sometimes the promotion is really good. Happy shopping!
Thanks for sharing.😃
Hi Roland, Instead of using chicken feet, can i use the equivalent of 2kg in chicken bones?
Can you freeze the uncooked fish balls if you are not eating them right away?
Hi Roland can I use batam fish
Can wheat flour be substituted with other types of flour? Whole Sg seems to have a shortage a flour now
Roland, will the taste of the soup be affected if I skip the portion of putting fish bone?
Hu Steve. No problem at all. You can skip that part. Doesn’t affect the taste of the soup much. Happy cooking
please make pork balls as well thanks

How about dry fishball noodle?
Hi Sir.. Is wheat flour the same as all the purpose flour?
Why don't u use tapioca flour?
🙏🙏
Hi Chef, I'm sensitive to wheat what other flour can i use?
Hi Jennifer. You can replace it with plain flour in the same amount. Just note that the fishballs may not be as springy but shouldn’t be much of a problem. Happy cooking!

Is the “kee” taste bitter cuz my daughter didn’t like the yellow noodles? I’m planning to use tanghoon tmr morning for breakfast instead.
@@jaclynylcaj kind of. Some people like my husband and kid doesn't like it. Whereas I'm the few odd ones who love it instead.
Where can i buy the bag?
