For Steak And Kidney Pie Bake 40 mins 180 c fan oven
500g of Steak
4 oz Kidney
1 Large Onion
1 tsp Dried or Fresh Thyme
1 tbps Worcestershire Sauce
oil
125 ml Beef Stock
Ground Black Pepper
Salt to taste if needed
Pastry
12 oz Plain Flour
6 oz Salted Butter ( Cold )
enough ice cold water to form dough
1 beaten Egg
this made 3 pies in foil cases

Yes I can't get any Kidney where I am !! The only Kidney I can get is Lamb but you have to buy the whole carcass !! Even then you only get TWO !

I used to like the steak and kidney pie served at the Henry House Pub, Downtown, Halifax. It's been 15 years since I left North America. I had been searching for this recipe for very long time. It evokes nostalgia, since we don't get these in this part of the world i.e. India. Thanks again!

What beef have you used
Any kind of braising/ stewing steak: beef chuck, shin of beef etc.
I've never cooked kidney before. Would there be anything wrong with searing the kidney first and removing it then adding it back to the gravy later?

My mother never put onions or thyme in it ,back in the 1960s and 70s !!

Back in the 50's and 60's we did put onion and thyme, we even put beef dripping if we had any. All Very British. She's done a great job.

Did you soak the kidneys first to get the "pissy" smell out?
The pig kidneys are the worst for this.
