Also: vertical planters might be a space saver! You can plant 3 items per planter. Not all flowers can be planted in them, but here's a list of the ones that can: begonia, bird of paradise, christmas rose, chrysanthemum, dahlia, daisy, holly, rose.
Personally I think the shop would look better detached from the house. Or if you renovated the house you could make a second floor and have her live up there with the shop on the first floor. (Which would REALLY suit the country french vibe)
I know you’re filming ahead but here’s an idea to get rid of the long greenhouse: make her greenhouse/shop the main level and move her house to a second level. This will give more room to have extra plants and the shop, while keeping the home feeling “tiny”. Also, I feel like her room is too “warm” and doesn’t give the vibe of blue is her favorite color. Love the series so far!!! You’re doing amazing 🥰.

If you don't want Vlad and other vampires visiting your sims, you can click on the houses' front door and ban vampires from spawning at your lot/house.
I agree with making the stairs of the shop wider to give customers more room to stand. I was thinking it was going to be more open air (so deleting the side walls). Otherwise, I love it!
When you get to the gemology character, once you get to level 5 or 6 of the skill you can cut a seed shaped gem and then plant it and it will grow a crystal tree that produces several crystals over night! Great for selling or making cheaper jewelry

That way, people come up and go inside the alcove sales area. Plus, she only needs to walk around on one side of the table ;) And other than that, I just say more plants for decorations in front of her store!!!

I was thinking, maybe you could open up the shop area to make it feel more like a deck by adding wooden floors and leaving only the columns, instead of those walls that make the space feel a bit claustrophobic, haha! You could also add some hanging plants and similar decor to give it a more open and inviting look :)
You should totally build -Doose's- a Market in the long run so everyone has a place to "sell" (cause I don't think you can actually mark for sale on a residential lot without the use of a mod or the sales table you're already using) their wares. It would be a cute display thing to show off lovely Ms. Hyacinth's florals, amongst the other future tiny townees trade goods.
I started my tiny town as residential rental with 7 units and placed them all onto the lot. Instead of the things to start their lives, they each had a tiny (32 tile) shell. I did this because I wasn't sure if I could start apartments once they were placed on the lot. This upped the challenge since they didn't have basic survival means, but they were fine as I got them into a club setting. I am playing on Magnolia Blossom (Willow Creek park) which is perfect because they can't see any buildings, so it really does feel like a tiny town. I'm doing it more of rotational gameplay unit by unit, rather than how Deligracy described. They are each hitting the goals, but I'm more concerned for them just having fulfilling lives.

BUILD A (almost) FREE GREENHOUSE Put a gabled roof directly on the ground. Make it round and raise it. Use one of the glass rooves (I like the one with the iron scrollwork detail). The only thing you have to pay for is a door, regardless of how large you make it.

Im having my sim do flower arrangements and always sell them on plopsy, I get around 5-6k per arrangement using 0 simoleons for making them

I think you can shift the bedroom and the bathroom upstairs, and use the space downstairs for a greenhouse that goes AROUND the house.
