I am going to make 梅子雞 today and I will make 梅子雞及羊柳 on Thanksgiving Day instead of turkey this year, and it will be very fun to try something new. Just let you know that I am a chicken lover, I've watched almost all of your chicken cooking videos for the last few months. My cooking styles have had a major revolution recently, love it! Thanks!

Jacky-梅子碌雞
做法 :
1.雞洗淨,吸乾水分,然後表皮均勻抹上老抽,備用。
2:鍋中加入少許油,放入雞「碌」香表皮,拿起,備用。
3:原鍋加入適量油,放入薑片、蔥段炒香,然後加入柱侯醬、黃豆醬及蠔油,炒出醬香,灒入米酒,加入鹹水梅、水及剩下的調味料,放入雞(先煮雞胸那一面),蓋上蓋,大火煮滾轉中火煮約10分鐘,然後將雞翻轉另一面,蓋上蓋,再煮10分鐘,最後將汁收至濃稠。
4.將雞盛起,略放涼後斬件上碟,將雞汁過濾,均勻淋在雞上即可享用。

I could not find 醎水梅子, I used the vinegar 白醋instead of it. It tastes very good. Next time I have to cook 2 chickens. 😂
