Kevin’s like party time 🎉, okay with the restaurant maybe it’s more like me and the dogs time - ah. My wife used to frequently make cheese cakes, especially when there was a need to take something to work for sharing. Hmm, her coworkers seemed to like cheese cake and about once a month there was a need for sharing. I actually watched her toss a cheese cake once, she felt it did not meet her level of perfection 😢, so it was fun to watch you kind of wing it.

The trick for a perfect cheesecake is to get rid of any clumps and bake it low and slow. You'll also have to let it cool in the oven. I've never had one crack before and I dont use a waterbath. But that's the beauty of cheesecake, it tastes good even if it doesn't look good.
