INGREDIENTS:
butterscoth pudding
Sugar 2/3 cup
Caramelised the sugar
Butter 60gm
Mix well
Milk 400ml
Keep stirring
Boil for 5 mins
Cardamom powder
Let it cool down
4 eggs
Caramel milk mixture
Greased pan
Steam for 30 mins
Let it cool down completely
Chopped almond
NOTE: 1 CUP = 250 ML

Whenever I add milk in melted sugar it curdles do any one knows whts the reason and how to prevent it

Are you using salted butter? If it touches salt, it will curdle.. so make sure of sugar and butter quality,spatulas, and utensils too

But want to share that I had added COLD milk into the hot melted sugar ...there was no curdling.

Tried it a while ago. There's no taste of sugar at all!
*After adding in an extra 2.5 dessert spoons of sugar, it turned out delicious😊
For some reason, most of the butter came up to the surface of the bowl
