In this video I show you how to prepare delicious stuffed peppers with potatoes, eggplant and mozzarella! This perfect dish for lunch or dinner is not only easy to prepare, but also has a fantastic smell. We use fresh vegetables and our favorite spices to make the peppers as flavorful as possible.
The stuffed peppers are stuffed with mashed potatoes and fried eggplant and baked in the oven until golden brown. The whole thing is baked with mozzarella to achieve a perfect combination of creamy filling and crispy crust.

Ingredients:
3 peppers
700g potatoes
1 onion
2 cloves of garlic
2 small eggplants or 1 large eggplant
30g butter
100 ml milk
60g mozzarella
2 tablespoons Greek yogurt
2 tablespoons mustard
½ tablespoon hot chili
A bunch of dill
Spices: salt, pepper, Italian herbs
