This is how I was taught at tafe for the 3 plate hold (not 4) for both clearing AND carrying plates out. I recently got a new job and they are trying to make me change to another that seems common. Its where u place three fingers under one plate and balance the second plate on your thumb, pinky and heel of your hand. I hate it, it hurts to change after 2yrs and I think it limits what you can carry. Do you think it is unreasonable for them to disregard your our way & say theirs is the only way?
I feel like my hands and arms are too small and thin for that. I always get shut at my job for not being able to carry more than 2 things at once - especially if the plates are heavy and burning. Carrying it with just my finger tips feels like I'm going to break them, and supporting the plate with my palm just scotches me. Any advice??
Did you have anything on your plate? That makes it harder... I put salt container, butter container and tuna cans on mine and managed to keep it balanced but it is hard for sure!
carrying 4 plates is easy if your restaurant doesn't serve massive amounts of food on heavy plates like mine, then you have to have really strong fingers and arms. You should be able to do 3 with practice, even with small hands. Try building the strength in your fingers by getting a stress ball and squishing it all the time using different fingers. Also practice at home, fill the plates with liquid as he says, or pile multiple plates up in each spot.

Carrying only scorching plates that have been heating up for 15 minutes, and at least one with 4-5 topped off drinks, walk around a room, naviguating through fellow rushed servers & customers getting in & out of their chairs, all while maintaining proper etiquette & a sincere smile.

i think for international standards you should be holding the first plate with a peace sign t the bottom and have the other two fingers to support the other plate the one finger thig is totally wrong
Catering is a dead end job. The only possible way out is to work for yourself, then you have a chance. Otherwise companies will lie to you about your career prospects, overwork and underpay you. On your 45th birthday you will wonder why you have ended up with nothing but the restaurant owner and customers have so much more. By then it will be too late. This is not a joke.
@elky29 carrying 6 plates at the time is Not professional. because when you take 6 some of those plates' bottoms squeeze the food in the other plates and skills won't help you prevent that, unless u are carrying half empty plates or pizzas OR you are working in a shitty restaurant where nobody cares about the serving, just wants their food quicker. it should be maximum 4 of them and even then, when you have 2 plates in one palm, the left ones' corner usually touches the others food

And I've been wondering WTF I've been doing wrong and how the hell are these old crows carrying 5 plate meals and I'm asking for a follow up... now I know & I GREATLY appreciate it

Nah in Australia the standard is 3 in most restaurants I've worked in places where they were happy for 2 plates and we would just run 2 servers to the table 😊
Balancing plates is stupid, risky, and a waste of time. If you have more than two plate (one for each hand), just put the crap on a tray and call it a day. No sense in being fancy while bussing either.

its easy if u have round plates -___- we have the wierdes formed plates and really deep ones too :c

I was able to carry 4 plates whilst working at hotel but only the entrees and desserts
The big secret is bending your hand a bit to your body when you put the third plate on top.
