I soak the ham for about 4 hours in cold water and wash it down. Then I boil it for an hour with some cloves, pat dry and then bake etc. That ensures the ham is fully cooked.
I prefer to REMOVE THE FAT CAP before GLAZING. I cook the ham with the fat cap on - 20 minutes per pound plus 20. At the end of that period , I remove the fat cap, stick the cloves ,pour the glaze and spread evenly with a brush. Back in the oven for 15 to 20minutes . I think keeping the fat cap during glazing will not allow an even penetration of the surfaces .
Thanks for this, I used it for my 2022 New Years Ham, the glaze was good, I never thought of using Thyme in it.. I added Pineapple rings on the ham and used some of the juice in the glaze

The glaze I did consisted of "pineapple Caribbean cool (because I didn't get juice in the tin, and that's all the shop had 🙄) so it's the pine juice, fine thyme, sugar, ketchup, cinnamon, mustard, nutmeg essence and my homemade seasoning".. Mixed it all in a pot till thickened.. Tasted yummm

Thats going to be one salty ham. I usually boil the ham for a few hours to get some of that salt out. You can put some clove in the water to add the flavor as it boils. It does 2 things, it infuses the clove flavor and removes the heavy salt at the same time. Then I go through the baking process and insert more cloves in and around the ham. That ham was not cooked enough. Well, to be honest, I don't know what kind of ham you use but where I am they are salty as hell, so you have to boil them first before you bake. Maybe you didn't need to do that there with that ham. But other than, that I would say have a portion of high blood pressure. lol...
Seno Ryan: I think if you are going to cook a dry ham encased in tar then you will need to boil out some of the salt first before baking it. The frozen hams in the supermarket usually do not require boiling before baking...just thaw to room temperature, wipe dry and bake.

So this is my third year making it like this and they luv it. Best recipe ever. I do boil my ham first with lemon, clove and allspice. Then put to bake on a rack with clove. I put water, white wine, bayleaf, anise,few clove, and couple allspice/pimento.. cover and bake. And thise are like 2 pieces each.... thats jus for infusion. Truly i luv this recipe. I use to put alot of clove on the ham before. It wasnt bad but like chef said it gets over powering. So now is jus 10-15 and it wotks excellent. 3 time running and is always a hit. Thanks Chef👍🙏💚

Enjoyed the ham baking however there should be more clove. It brings out the flavor much better together with cinnamon brown sugar and mustard.
