Side note: modern 60% boards are in fact derivatives of the original Apple M0110 that came with the first Macintosh (which the HHKB Japanese keyboard, that would come a few years later, used as inspiration). So, technically, the HHKB design predates the modern 60% keyboards (with "moogle" bottom rows) by more than a decade... :)
I have been having the same thoughts for about 2 years now since the keyboard market has gone stale recently with every 2 months there's a new keyboard coming from china while offering nothing new to the scene. Despite not having the fund for it I'll one day have my dream board with everything I want. I find this video inspiring to continue on my keyboard development.

Unfortunately no stepped caps lock, as on HHKB layouts that key is meant to be used as Control, which to my knowledge is never stepped
