It's truly difficult to think of my favorite reason why I love Chef JP's videos, because there is just so much Good Stuff. However, what stands out for me today is that he will always tell us when it doesn't matter. Want more olives? Add more olives! Don't like olives? Don't put them in. Warm potatoes? Cold potatoes? Doesn't matter. And then, in other videos, when he does something that is really important, HE'LL TELL US! This is critical, my friends, don't skip this step! Very important.
Chef JP is a Chef's Chef.
for swabian potato salad it does matter because it wont get the right texture if you make it with cold potatoes. its just chemistry tho the potato starch binds better when warm just keeping this fact in mind. you can still eat it cold if you prefer it that way but during making it, it should be warm or almost hot.

I make an American Potato salad with bacon, and depending on how much I'm making I use some of the bacon grease in with the potatoes has the mayo does not break down and get watery. That French Potato salad does look interesting.

Being German I can actually confirm your German Potato Salad‘s base recipe is very much like the one my wife makes. She does it a bit different towards the end but by and large it‘s very similar. Much to my detriment because I grew up with another variant that involves Mayonnaise, pickeled Cucumber and Apples - also very delicious, but my wife doesn’t like it as much as I do. As far as Potato Salad is concerned, we‘re a house divided 🤣
I make my German salad with gherkins, Strasbourg and egg.
My potato salad seems to be much closer to the OP and Chef JP. But I was taught to render the bacon, save a 1/4 c of the fat, then saute onions and a flour/sugar mix w celery seed. White vinegar was the original,but I prefer a really good red wine vinegar.
Being German myself, I don't care how people make potato salad as long as they're making it/trying it. Doesn't matter if they make it how Oma used to make it. Doesn't matter if they make it how my mom makes it. Doesn't matter if they make it how Walmart makes it. Eat potato salad because it's amazing

@@runtwer5700 i agree with your statement, but my oma, and her oma as well, would roll over in their graves if they saw this video. this german potato salad is not the simple, delicious one that i know. the one i know has only 6 ingredients, including salt and pepper. potatos, oil, vinegar, onions of some sort (white onion, chives, green onions, etc. whatever you can find), and s&p. for leftovers, add a tiny bit of mayonnaise to moisten it a bit because the potatos will absorb a lot of the liquid overnight. and of course, it must served at room temperature. the flavors are muted when it is chilled.

I watched this video when it came out almost 2 weeks ago. Low and behold at church this past Sunday they mentioned having a Wednesday night fellowship this week and was asked to bring something Italian. This led me back here today and I just made it according to Chef John's recipe with the exception of the Genova salami because I don't have any on hand. After making and sampling the Italian version its going to be hard to to eat it before tomorrow nights supper. As he says....... it's delicious! I am learning so much from this channel and consider John Pierre a true blessing in my culinary path. Thank you so much for the content you put out.

If you can find those tiny purple potatoes, try to mix them with the regular taters.

In Germany there are two main versions of potato salad. In the southern parts of Germany, they like to make it with vinegar and oil, like you did. In the northern parts, it's done with mayonnaise, which I'd prefer every day of the week ;)
but he didnt make a swabian there is no sausage or bacon in swabian potato salad he already said so himself I just realized
My Swabian (Southwest German) grandmother had 2 potato salads. The other one was even easier: Boil potatoes unpeeled. When just cool enough to handle, scrape skins off with a butter knife, cut into chunks and pour vinegar and oil (or bottled Italian dressing) while the potatoes are still hot, let cool to room temp, then add tomatoes, cukes, and lettuce. Also chopped chives and parsley if you have them.
I miss old school German potato salad---the vinegary cooked kind with diced smokey bacon in it. I got yelled at for trying to sneak some of the lean bits out of the big bowl with a fork.
Easier still: chop cold leftover potatoes in mayonnaise. Done. I physically hate garlic, which would ruin all these redundantly elaborate salads for me, sorry.

Peeling potatos hot and pouring vinegar and oil on them, while they're still hot, is a must. That way they soak up the dressing and get mushy. I wouldn't want firm potatos in my salad.

Tell Jack not to give up on olives. Our tastes change throughout our lives. I couldn't stand olives when I was younger. Then I tried some nice stuffed olives in a Mediterranean salad and I was hooked. Now I can eat them by the handful.

I'm from northern Germany and we don't usally make potato salad like that you showed as "German". In northern Germnay potato salads with mayonaise, pickled cucumber and eggs are more common. My grandma used to make it also with meat salad. Mustard is also quite common as additonal seasoning.

My grandmother was from Germany and her potato salad was almost identical to yours except she left out the green onion. If you didn't hurry and get a serving it would be gone! Lol
I personally like it cold after it sat in the fridge for awhile, my father on the other hand liked it warm... delicious either way!

There is no "German potato salad". The recipe depends on the region. In the south, only potatos, broth, oil are used, sometimes with mustard, onions and/or pickles. In the north, a mayonnaise based dressing is very common.

Potato salad so good. So many different ways to prepare. Some great surprises at potluck events,
White balsamic vinegar was a such a happy discovery. I make sure I never run out of it---a Godsend for those who can't tolerate the harshness of standard vinegars. I have a couple of the same Cuisinart cups and a few more taller ones for use with my immersion blender. Saves me from cleaning up splatter.

Your German style is the best of the 3 in my opinion. I've been to all 3 countries and have eaten plenty of each but for some reason, mom's homemade here in America will always be my favorite. Southern style loaded with many ingredients for taste and texture.

I Love these types of episodes chef. On Sunday I’ll make two or three types of pasta, salad or potato salad or something like that to last for lunch is for everyone throughout the week, and these are perfect to provide me with ideas.
Yesterday I got the urge to make a potato salad, wasn't sure what I wanted to do, so of course I checked your website and only found the one recipe. I wanted something a bit closer to the German style, so I thought, I'll just come up with something tomorrow. Now tomorrow has arrived and I see this video! Absolutely perfect timing for me.

Another inspirational video.
I made roasted sausages with warm potato salad - really simple: vineger, sugar, salt and pepper, and had great leftover. Personal addition to the marinade: A large dollop of mustard (a dollop is more than a pinch and less than a splash - so measure carefully) Plus a lump of butter. This could be of general interest in so far as the sausages in this country are getting above 50% meat - with the sausages in question it was (according to the package 80% meat) - that is acturally to good a quality, as there needs to be fat and binder in the sausage.
So the leftovers was converted into "Swedish Sausage Dish" - Involving roasting the sliced sausage in lots of paprika and onions (lots being more than a pinch and less than a shovel -- so measure carefully) and can of tomato choppings and a can of tomato paste. The point being that when I boil potatoes, I add not only salt (generally just a pinch, where I should have used lots - but with recooked sliced potatoes - it does not matter, as that can be adjusted later) but also vegetable stock).
"Swedish Sausage Dish" is generally repurposing leftovers - something remembered from your childhood with great taste, as you use stuff basically already cooked and spiced. My neighbour loves it. Cooking for just one person is difficult and with stuff like sausages and potatoes there is no added labour and cost making to much. So if you have a neighbour that is elderly and to some extend frail - run over with a plastic tray of the stuff, and they can reheat it the microwave - so dinnertime is not a concern. Accept a cup of coffee so as to even out the gratitude. In these budget constrained times (they are always budget constrained) help each other out. There is nothing more damaging than neighbour strife.
One other tasty budget tip - goes for Denmark, but to the eagle-eyed (but spectacled) consumer there are stuff on offer in the supermarket of high quality: F.i. pork roasts, where there is a lower price pr. pound - because the butcher in the store does not need to put in work and mince. They might claim: Minced today - which is probably true, but 3 days ago it was cutlets and 6 days ago it was a roast.
Actually - at the moment - pork roast is half the price of minced beef - and any lack of fat can easily be adjusted with BUTTER! Some flavours are fat soluable and not water soluable.
When I buy a pork roast - 1½-2 kg, I cut up half in thick cutlets freeze them in smaller protion+ containers. Reverse sear them. The fatty skin is melted over a low heat - if you are really ambitious - you roast onion in the fat till they give the maillard reaction, and you have the perfect bread spread for pickled herring on black bread. There is next to no additional work involved.
My nan would make awesome tater salad but i think it was the english salad cream she used that separated it. A unique kinda mayonnaise style dressing. The hot german potato salad sliced thin are some of my favorite food memories. Thanks Chef for the great vids!!!

They are great for a grill as well - if you grill pork chops and/or sausages. Invite neighbours as well - or they will show up anyhow when they smell the roasting.

I like the basic recipe. I always make mine oil free and of course garlic free.
thank you very much for these recipes. I grew up with bacon and potatoes but not these mouth watering flavours and international inspirations. I enjoy the ad hoc creativity and the emphasis on personal taste choices both included and excluded. I almost never closely follow a recipe. I didn't realize cheese drank up the dressing. Great tip! Chiffonier technique is a plus.
Im Germany we have 2 different types of potato salad: In the north it’s mayonnaise based, with some egg, a bit of mustard and cornichons.
