The "Beep, Beep" was the Dj (Johnny Juice) cut scratching a record, what is called transforming. What you actually heard was him manipulating the James Brown guitar part of the record, along with the mixer's crossfader. So, he was moving the record back and forth swiftly, while at the same time also moving the crossfader just as swiftly. That changed the sound into that "Beep, Beep" you heard. You probably should look up some DJ videos and watch how they do what they do. Instructional or just them DJing.
The Anthrax remake is also famous in its own right as one of the best-known rap-metal collabos that were ever recorded. Might be something you'd enjoy. This version here is more important from a pure hip hop point of view though...

The version with Anthrax is 🔥 I recommend listening to Fight the Power (probably the song they are most known for) and Can’t Truss It. They don’t have a bad song though, IMO.

Those Public Enemy records of the late '80s really did change everything, sonically and lyrically. For a "fun" Public Enemy song, you should check out "9-1-1 is a Joke" with Flavor Flav up front.
Another song on "It Takes A Nation Of Millions To Hold Us Back" that you may enjoy is called "Don't Believe The Hype" . A song that sadly fits perfectly with today's social, political, and media climate (plus it jams).

When I first heard this I thought wasn't like a Public Enemy song I'm used to, but opposite of what you thought. Their first album was a fun album compared to everything else. They got more serious and political as time went on. Their first two albums are my favorites. You gotta check out something from Yo! Bum Rush the Show.
