I used fresh blended strawberries in the buttercream and it looked a little curdled. Yes the sweet strawberries filled my room with its fragrance. Thanks
Have I shared my strawberry punch recipe with you? In a large blender add the flesh of 1 seedless watermelon and 2 cups strawberries that were frozen until you let them thaw, just like in this video's compote. Blend it all together and serve chilled.

We made this cake today. The sponge was too compact, I think we pulsed the food processor far too long. So next time we will do better. The buttercream on the other hand, is amazing! Never seen very stabil buttercream like this before. Thank you so much, Gretchen!

Yes to both! However read (or watch the part where I explain about the breaking emulsion especially when re-whipping this BC the day you need it! I prefer to make it right before I ice the cake!

Yes! I make a note of that on the written recipe on my website where you can simply mix everything by hand in a large bowl with a whisk. However, you will have to purée the strawberries somehow (in a blender?)
I use organic sugar so it is sure to be vegan, therefore the grains are slightly larger & darker in color . Regular granulated white sugar is processed through bone char making it not vegan.

I’d love to make this cake next week
Less strawberries for the compote. The recipe calls for a lot. The option is to use some of it to make the strawberry vegan frosting. I’m having hard trouble with it only because of the amount of compote I used on cake and powder sugar used in frosting. You almost have to play with it until you get it right. Otherwise it’s a very good cake.

I just checked out my "notes for success" section that I include on all my recipes and here was the notes: For the cake batter you will have to use fresh berries, since frozen berries leech too much liquid and will turn your cake heavy and rubbery Additionally I used a drop of pink food color to get this vibrant pink color since just fresh strawberries alone (while it will be pink) it will be very light pink color
