    Thanks Gretchen I made this strawberry cake and it turned out so nice . I was a little apprehensive about using so much baking powder in the mix but it worked.
    I used fresh blended strawberries in the buttercream and it looked a little curdled. Yes the sweet strawberries filled my room with its fragrance. Thanks

    Have I shared my strawberry punch recipe with you? In a large blender add the flesh of 1 seedless watermelon and 2 cups strawberries that were frozen until you let them thaw, just like in this video's compote. Blend it all together and serve chilled.

    Love the ease of the pretty, fresh strawberry cake recipe. I hope I can track down some sweet strawberries this summer, usually they are quite sour and a disappointment, like the punnets I bought recently. This will teach me to buy locally and in season.

    We made this cake today. The sponge was too compact, I think we pulsed the food processor far too long. So next time we will do better. The buttercream on the other hand, is amazing! Never seen very stabil buttercream like this before. Thank you so much, Gretchen!

    Amazing cake. I'm make this cake this weekend for a loved one. Wanted to know if the Chantilly frosting would work with this cake or would it be too sweet?

      Excellent! Chantilly frosting is whipped cream so that would go absolutely perfect with this cake

      Would I be able to make your less sweet buttercream and the compote for this cake ahead of time then assemble one day? I know i can make the cake and freeze it. Wondering about the compite and that specific buttercream.
      I’ll continue telling you because you’re my go to for desserts….YOU ROCK🤘🏼

      Yes to both! However read (or watch the part where I explain about the breaking emulsion especially when re-whipping this BC the day you need it! I prefer to make it right before I ice the cake!

    If I can't get any cranberries will any other frozen berries will do? All berries except for strawberries are difficult to get where I live (middle east)

      Yes! I make a note of that on the written recipe on my website where you can simply mix everything by hand in a large bowl with a whisk. However, you will have to purée the strawberries somehow (in a blender?)

    What kind of sugar did you use. It doesn't look like granulated sugar.

      I use organic sugar so it is sure to be vegan, therefore the grains are slightly larger & darker in color . Regular granulated white sugar is processed through bone char making it not vegan.

    Gretchen, I have a question. One of my customers gave me a bag of vegan flour. Can I use this in your recipe? It's a 1:1 vegan flour by King Arthur.
    Can you bake ahead and freeze this cake?

    Hello I checked out your buttercream video where you use apples to make a creamy custard to add to your butter but I can’t seem to find one where you explain how to make the strawberry power you use here and I’m very confused rn 🥲 could someone direct me to the proper video please?     Less strawberries for the compote. The recipe calls for a lot. The option is to use some of it to make the strawberry vegan frosting. I’m having hard trouble with it only because of the amount of compote I used on cake and powder sugar used in frosting. You almost have to play with it until you get it right. Otherwise it’s a very good cake.

    Mine came out brown and I couldn’t taste the strawberries 🙁 I wonder if it’s dependent on how ripe the strawberries are?

      Hmm, Yes, that could definitely play a part. I almost always use frozen berries if the fresh ones are not in prime season
      But brown? Hmm 🤔

      @@GretchensVeganBakery not brown like chocolate brown, just a very dull color and not pink. I’m gonna try again using frozen, the strawberries up here suck 😂

      Oh I see ! Ok that makes sense! I just checked out my "notes for success" section that I include on all my recipes and here was the notes:
      For the cake batter you will have to use fresh berries, since frozen berries leech too much liquid and will turn your cake heavy and rubbery
      Additionally I used a drop of pink food color to get this vibrant pink color since just fresh strawberries alone (while it will be pink) it will be very light pink color
