@Evoke Spirit There actually are valid uses for microwaves at a restaurant kitchen. In particular, steaming things, heating sauces, and melting things quickly are all things that even a lot of higher end restaurants will use them for. They wont use them for center plate items, but specific ingredients and accoutrements will often be briefly microwaved as part of the process even at some Michelin Star restaurants. It can improve service, and there are ingredients that can be microwaved without degradation of quality
The problem arises when lazy or low-skill chefs use it as a crutch and just reheat everything
