- 我細細個嗰陣,係三代同堂一齊住。
大部分時間,都係嫲嫲煮飯,
但偶爾爺爺會下廚,煮返兩味。
因為我太嫲係牙買加人,所以爺爺煮嘅嘢,好多時都有牙買加影子。
今集呢個餸,係其中一個我最鍾意我爺爺煮嘅餸。
個餸一路都冇名😆但我由細到大都係咁叫😉
今日同大家分享一吓。
爺爺雞 Tarzan’s Grandpa Chicken
Ingredients
Bone-in chicken thigh 雞髀 700-750g
Dark brown sugar 黑糖 120g
Canned tomato with juice 罐頭番茄連汁 400g
Onion 洋蔥 250g
Chicken stock 雞湯 150ml
Water 水 200ml
Minced garlic 蒜蓉 20g
Minced Ginger 薑蓉 15g
Salt 鹽 3g
Ketchup 茄汁 40g
Dark soy sauce 老抽 25g
Worcestershire Sauce 喼汁 5g
Bay leaf 月桂葉 2pcs
Chicken marinade 醃雞材料
Onion powder 洋蔥粉 1tsp
Garlic powder 蒜粉 1tsp
Jamaican All-Spice powder 牙買香粉 0.25tsp
Thyme 百里香 a pinch
All-spice Substitute: Cloves + cinnamon + nutmeg
牙買加香粉代替品: 丁香+肉桂+豆蔻

Since this dish is recreated from your childhood, I was just wonder if there's a difference between your dish and the Jamaican Brown Stew Chicken. 呢個似你教過嘅番茄椰汁雞走椰汁,我睇你嗰條片之前喺一個減肥app度認識嗰味餸,佢話係牙買加菜,但我一直都搵唔到其他食譜,所以證實唔到,而家睇到你煮呢味就更加覺得似
之前以為allspice得allspice berry磨粉嗰種,原來重有另一種係溝出嚟嘅,我又學到嘢啦

其實我好羨慕好多人都可以靠味覺懷念親人,搵返以前既感覺,我都好想可以.....😢
我而家都成日煮以前阿爸阿媽煮比我食嘅餸,兒時味道特別好食
我都係靠回憶煮返媽媽以前煮嘅味道,例如魚蛋米粉、家常咖哩雞、排骨炆涼瓜等等。

sorry!可能用詞有不當地方,汁應該是好味的,但係怕d雞有雪味同鞋口,試下雞脾用义插d窿,時間少d用關火焗入味。ps.你教個担担面醬係好好味的。
