Corn Baba is similar to how we make tamales here in Texas, only we put a filling in and roll the corn husk rather than just fold it. Your corn pudding or paste is rich looking. The sugars and milk of the corn are cooked down into a sweet creamy treat. I never knew you could make a pudding out of the liquid, but it makes sense now. You make it look easy, but I know it takes a lot of work to express the milk from the corn. Very inventive way to use corn Grandma. I noticed when you were dipping your corn cake into the brown sugar water, that the bowl must be very old. All those fine cracks make me think it's old bone china. The rice cakes look sweet and chewy. I am craving corn now. Thank you for sharing your recipes and how you use them.

My mother makes corn baba at Christmas . We call it tamales! She puts pork and beef that’s been stewed with spices for a day in the corn dough and it all steams in the husk. We serve it with hot sauce. It is delicious and I never get tired of eating. My favorite has cheese and green chiles in the middle. Thank you for sharing your day!
