The correct way to eat the juicy dumplings is to use a small straw (you should ask for it) and use it to slowly suck the juice first, then you can eat the dumpling without spilling.
When you eat soup dumplings, you should use spoon or bowl to catch that soup. You also can put it on the spoon and make a little hole, let the soup out of the dumpling to spoon, and drink it first and then eat it.
If you go to China next time, you can include Xinjiang and Tibet in your travel plan. In Xinjiang, you can see completely different architecture and different races. It has a Central Asian style and the scenery is completely different from other places. Because the area is very large, please allow time. The closest place to paradise is: Tibet, where you can see snow-capped mountains, pure lakes, and simple Tibetan people. If you have a chance in life, you must experience the plateau once.
Shanghai is not the largest nor biggest city of China... the #1 city is Sansha by area (Shanghai not even in the top 10 by area) and Chongqing by population (32 millions vs Shanghai 25 millions).
