📝 Ingredients:
2 large eggplants
3 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 bell pepper, chopped
2 tomatoes, diced
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish
👩‍🍳 Instructions:
Preheat your oven to 375°F (190°C).
Slice the eggplants in half lengthwise and score the flesh. Drizzle with olive oil and roast until tender.
Sauté onion, garlic, bell pepper, and tomatoes in olive oil. Add cumin, paprika, salt, and pepper.
Scoop out eggplant flesh, mix with sautéed veggies, and fill eggplant shells. Bake for 10 minutes.
Garnish with parsley and serve.
