Even discounting the time at Vorig for the nobles' soiree it has taken months since leaving Graf Granat's domain to get to where the road splits. So, yeah, it really is a decision point for Sein. Given how long it's been an extra year for a side trip to Ausserst, assuming they just double back to Tur instead of pressing on to the North, could still mean missing Gorilla...
He has been told about the defeat of the demon king. The implication being he is really starting to lose his faculties. Frerien is about to correct him but doesn't, which is how you are supposed to handle it, just let it go. As you say she remembers her master, elves seem to have better memories than humans and dwarves and its not clear if they have any upper limit in their lifespan so dont seem to suffer age related memeory issues.
Voll is at the age that if he were to be reminded that the Demon King was defeated and he had kept his promise to his wife, he might just pass away. That promise and sense of duty is what keeps him going.
You said a few things in your closing that I loved, "It was nice ... for the moment it lasted," and "I feel like it's going to be a long time before we see him again, but it's something for me to look forward to." To harp on the theme of time some more, these feelings are 100% what the show often tries to convey. Appreciating what we have while we have it, and look forward to the future, don't dwell in the past.

I think the reason Himmel never tried to get involved with Frieren is because he doesn't want her to be burdened like ol'man Voll was

These feelings can be hard to embrace but it shows how beautiful life can be with this mindset 🙂

Old Man Volls did know they beat the demon king he is just old as balls so he is loosing his memory.
