There is no hard coded breakfast rule in India. We stay at one place and hardly go out to eat and every morning we have a different dish in breakfast. Sometimes it is north indian paratha, sometimes south indian upma or idli-sambhar, sometimes just plain roti-sabzi or sandwiches. Every region and city has some famous local breakfast. I hear people in UP love kachori and jalebi in breakfast. In bangalore you will have traditional south indian stuff or egg pakoda (literally every shop was selling egg pakora when I lived in bangalore). In pune there is inescapable vada-pav and misal-pav (I ate vada-pav every single day when I lived there, sometimes all my three meals of day consisted of vada-pav. I love it sooooo much).😋

For fellow Indians, Chai Tea is what westerners say to mention Indian styled Tea. If you ever come to Canada, go to a Tim Hortons they got a Chai Tea bag, go to Starbucks they got a Chai Latte(it's the best) and there's the same Chai Latte at Van Houtte(not good as Starbucks Chai Latte though). It basically means Masala Chai or Spice Tea. All of the flavors I have mentioned have either Cinnamon as prominent flavor or it's Cardamom. However, what Indians actually do is they use Orange Pekoe tea leaves for making tea and it is flavored with GINGER. So Masala Chai or Chai Tea is basically Orange Pekoe with Spices.
Breakfasts in north india and south india are different.. Kerala breakfasts: Puttu+Chana masala, Dosa + chutney, Appam+Chanal masala or egg masala, Idiyappam + chanal masala or egg masala, Dili+Sambar.. etc.. Please come to kerala try our food items..
I think couple of points you may have picked up wrong. 1: Chole bhature is not the only food people eat in breakfast, it differs from place to place. Parantha, sandwiches, poha, upma idli etc are few to name. 2: The community service food is called langar not bandra. The latter is place in Mumbai. 3: The buttermilk is churned up yogurt. It may have tasted different due to seasonings in it i guess. Avid follower, check out Punjab if you have time. You will love it!

To begin making the Classic South indian Rava Idli Recipe, prep all the ingredients and keep them ready. Heat a teaspoon of oil in a pan on medium flame, add mustard seeds and allow it to crackle. The desert you were eating was halwa. It has many types but looks like sooji ka halwa . You get it everyday in a Gurudwara ( sikh temple), and you get free food which is known as langar in india. I think you should visit Bangla sahib gurudwara in Delhi to try it and know more about it.

Not read all your comments but incase no one has mentioned, the sweet thing could be a sweet potato or pumpkin pudding. However it's most likely to be cream of wheat pudding with south asian spices fruits and nuts. The butter milk is supposed to slightly sour / tart due to yogurt cultures but I'm putting my money on the fact it's started to go off by the way you've described it. It needs to be served fresh / chilled, and on the streets it's best from a clay pot which would keep it cool and not warm up. Hope you've not got the Delhi Belly!

There is no hard coded breakfast rule in India. We stay at one place and hardly go out to eat and every morning we have a different dish in breakfast. Sometimes it is north indian paratha, sometimes south indian upma or idli-sambhar, sometimes just plain roti-sabzi or sandwiches. Every region and city has some famous local breakfast. I hear people in UP love kachori and jalebi in breakfast. In bangalore you will have traditional south indian stuff or egg pakoda (literally every shop was selling egg pakora when I lived in bangalore). In pune there is inescapable vada-pav and misal-pav (I ate vada-pav every single day when I lived there, sometimes all my three meals of day consisted of vada-pav. I love it sooooo much).😋

For fellow Indians, Chai Tea is what westerners say to mention Indian styled Tea. If you ever come to Canada, go to a Tim Hortons they got a Chai Tea bag, go to Starbucks they got a Chai Latte(it's the best) and there's the same Chai Latte at Van Houtte(not good as Starbucks Chai Latte though). It basically means Masala Chai or Spice Tea. All of the flavors I have mentioned have either Cinnamon as prominent flavor or it's Cardamom. However, what Indians actually do is they use Orange Pekoe tea leaves for making tea and it is flavored with GINGER. So Masala Chai or Chai Tea is basically Orange Pekoe with Spices.

I think couple of points you may have picked up wrong.
1: Chole bhature is not the only food people eat in breakfast, it differs from place to place. Parantha, sandwiches, poha, upma idli etc are few to name.
2: The community service food is called langar not bandra. The latter is place in Mumbai.
3: The buttermilk is churned up yogurt. It may have tasted different due to seasonings in it i guess.

To begin making the Classic South indian Rava Idli Recipe, prep all the ingredients and keep them ready.
Heat a teaspoon of oil in a pan on medium flame, add mustard seeds and allow it to crackle. Add the torn curry leaves, grated ginger, green chilies and cashew nuts. Roast them for a few minutes. Add the Semolina/Rava and roast until you get a good aroma. Set aside to cool.
Set aside the roasted rava idli mixture to cool.
In a mixing bowl combine the roasted rava idli mixture along with the yogurt, and add just enough water to make a thick batter and keep aside to rest for 10 to 15 minutes.
After the resting period, you will have to add a little water as the rava idli batter would have soaked up all the moisture. Add the grated carrots and enos fruit salt and whisk the rava idli batter.
If the batter is too thick add water to make a thick batter of dropping consistency. Stir well for a couple of minutes
Preheat an idli steamer with enough water and keep it ready.
Grease the idli mould with oil and spoon the Rava Idli mixture into the cavities. Place it in a preheated steamer and steam for 10 minutes until done.
When you test, the rava idli should be cooked and the tester should come out clean.
Serve the Rava Idli along with South Indian Coconut Chutney and Potato Saagu for a quick and wholesome breakfast.

The desert you were eating was halwa. It has many types but looks like sooji ka halwa . You get it everyday in a Gurudwara ( sikh temple), and you get free food which is known as langar in india. I think you should visit Bangla sahib gurudwara in Delhi to try it and know more about it.

Not read all your comments but incase no one has mentioned, the sweet thing could be a sweet potato or pumpkin pudding. However it's most likely to be cream of wheat pudding with south asian spices fruits and nuts. The butter milk is supposed to slightly sour / tart due to yogurt cultures but I'm putting my money on the fact it's started to go off by the way you've described it. It needs to be served fresh / chilled, and on the streets it's best from a clay pot which would keep it cool and not warm up. Hope you've not got the Delhi Belly!
