Is it normal for cats to "honk" instead of meowing? What causes cats to "honk?" I don't know why this happens, yet I love the honking.

Normal or not is hard to answer. Each cat has their own ‘voice’. Some are closer to a meow than others. I had one cat who would ‘waaah’ (yes like a baby) and another would ‘brrmow’. The closest to a meow any of mine have ever had was ‘ow’.

It’s possible but not necessarily the case. Mine that would ‘waaah’ was a twin with the one that would ‘brrmow’.
Ricky 1000 I had one cat that made a "mih" sound as a meow, another one like "mrow", and the one I have now usually chirps when she wants something. Unless she REALLY wants something, then we hear "mrow-row".
