I think in this case, "tadaima" simply refers to「只今」which means "right now". The greeting "tadaima" is basically a shortened way to say 「ただいま帰りました」or "I came back home right now". So "tadaima hennshinnchuuu" would be "transforming right now".

'Tadaima" can mean "right now" or " right at this moment", Yes, It's also commonly used phrase "I'm home" in Japan but that's not the case here.

Would you still call this comfort/soul food, or does this lean more towards fine dining?

I’ll stick with 500 yen ramen served by 80 yr old man. One I had hidden in small alleyway run by old married couple was the best I’ve had honestly.
Nothing fancy just basic tonkotsu style.

that crouton is long. anyway 2 thumbs down. you complain about its spiciness like what, 3-6 times in 8 minutes? why don't you just order less togarashi instead of complaining about it the whole time? it's annoying.
