- TUB WAN (Spicy Pork Liver Laab)
INGREDIENTS:
1.5 lbs Pork liver, sliced
2 stalks Green onion, chopped
Cilantro, chopped
2 small shallot, sliced
6 sprigs of mint
Lime juice, about 1 tbsp
1-1/2 tbsp Toasted dried chili powder
1 tbsp toasted rice powder
1 tsp MSG
3 tbsp fish sauce
TO CLEAN PORK LIVER:
1/3 cup white vinegar
1 tbsp Salt
Milk, enough to cover liver
Serve with sticky rice and vegetables (Lettuce, long beans, thai eggplants and cucumber)

I watched a 15 year old Thai young man prepare this dish. It was much the same except he cut the liver into smaller pieces, "cooked" the liver under hot tap water, and he used more lime.
