why not use wireless connection, add ezcast pocket to transmit video data to computer using 5G. no wire, more mobile, but may last 2 hrs due to heavy use

If you use all 3 cameras over ethernet, does all 3 cameras have to be plugged into the ethernet box?
If you only want to use the app to record on these cameras for a podcast, do you need to have the internet plugged into your ethernet box?
No You can do wireless and just do it with Wifi
Are you connected to internet via the same switch where the mevo cameras are connected too? And is your switch a POE to power up the cameras?

if i connect them all to ethernet does it matter how far away the cameras are? will they still work if im not 30ft away from them
As Long as the wire is long enough than you should be good .
