You can add flavour to mead by boiling some orange or lemon peels in the water. You can also use lemon juice but boiling the peels gets stronger flavour imo. Using more yeast you can get results faster, in like a week or so. Also you can put raisins into the bottle and when they rise to the surface it tells you that some alcohol has formed.
Not a mead expert, but have made a bunch of wine & beer. Feel free to ignore if you don't care, but a couple of things you might find relevant/interesting: lack of sanitation matters less the higher the alcohol content (and before that, sugar, due to osmotic pressure) and lower the pH. So if you don't want to sanitize, the best thing you can do is either acidify or add more sugar/honey. Alternately, campden tablets can be bought cheaply on amazon or whatever it is you have in upside-down-land and will keep most nasties (molds and acetobacter, the two main things you'd want to avoid) from forming in your fermenting mead. Like 1/4 of a tablet in each bottle would be plenty. Last thing then I'm done: nothing wrong with using bread yeast, but bread yeast has a much lower alcohol/sugar tolerance than wine/beer yeast, so you're likely to wind up with a lot of unfermented sugars in the end, or possibly fermentation won't start because too much sugar. All this is extremely armchair stuff from me though, so if I were you, I'd just ignore it all. Anywho, good luck! Fermentation stuff is fun.
