Hed Hom (เห็ดหอม) or dried Shitake mushrooms has been traded and used in Thai cuisine for centuries - loved for its umami and nutritional properties. In my own family, Hed Hom has been used for generations. Nowadays it is even cultivated in Thailand. Thai food, as any food culture is the result of fusing regional cuisines, as a result of migration and trade over millennia. Putting ingredients in isolation, one can ask questions like: why do the English drink tea when it is not native to England? Over time, colonialism, trade, war, migration, and travel have all contributed to evolve local and regional cuisines.
