You were actually able to find some Einkorn wheat. I was involved with ibex some years ago. Unfortunately, the opportunity to eat one was not possible.
It might be interesting to grow enough Einkorn wheat to malt in order to make a batch of paleo beer? Something like they might've made with wild yeast back in that time period?
Every grain naturally has wild yeast on them, your beer will ferment on it's own. Just add a handfull of fresh grains in to your mash after it cools down ant give it 4-8 weeks. Taste it once a while, you'll know it's ready when it's not sweet anymore. This will be the most "paleo" way to make beer)
Chewing corn & spitting into the fermentation vessel is how they make cheecha in South America. And grains come packed in one pound Ziploc bags for the most part these days, so not a lot of wild yeast on'em from Maillard malts I get from the main supply houses.
Spend any amount of time camping (back in the day) and Hair, and ''particles of flies'' are just par for the course as far as dining out is concerned. In fact, I'd be surprised if his food did NOT contain these things.
By the way, his name is pronounced Ötzi not Uzi ;) In French, German, Swiss, Swedish, Austrian there is this Ö sound like in the words "öffentlich" "österreich" "geschöpf" "löffel" Einkorn tastes pretty bland, is difficult to make bread with. I sprout the full grain and then add homemade tomato sauce and cook it together. More available to you might be "Emmer" which is the grain that was grown in Italy and Greece even just 100 years ago for pasta. Otherwise oats grown on good soil can taste quite good too with carob and a little honey and are nutritious. You really need the best quality dough, some oats are too fibrous, some are bland. Perfect hiking food as it doesnt need to be cooked, thats how i climb in the alps :)

Well yeah you can't exactly store raw meat very well 5000 years ago, best bet is drying it but that doesn't stop flies and parasites.
