The BEST Buffalo Chicken Meatballs | Baked Chicken Meatball Recipe

  • This Buffalo chicken meatballs recipe is an easy chicken meatballs recipe for your next party! After watching this video you'll make these baked chicken meatballs every time guests come over and you'll look like a star when you tell them how to make chicken meatballs buffalo style!
    INGREDIENTS
    • 5-7 garlic cloves, crushed
    • ½ onion, coarsely chopped
    • 1 celery rib, coarsely chopped
    • 1 medium carrot, coarsely chopped
    • ½ red bell pepper, coarsely chopped
    • 1 tbsp olive oil
    • 1 tbsp chicken bouillon paste
    • salt & fresh ground pepper
    • 2 lb ground chicken
    • 1.5 cups seasoned panko breadcrumbs
    • 2 eggs
    • 2 tbsp Chef Ange Base Seasoning - • The ONLY Seasoning Ble...
    • 1 tsp smoked paprika
    • 2 tbsp Frank’s Red Hot sauce
    • 2 tbsp fresh chopped parsley
    • spray oil
    • crumbled blue cheese, for garnish
    • fresh chives, finely chopped for garnish
    Buffalo Sauce
    • ½ stick butter
    • ½ cup Frank’s Red Hot sauce
    • 1 tbsp Worcestershire Sauce
    Low Calorie Ranch Sauce
    • ½ cup Greek Yogurt
    • ½ cup light sour cream
    • 2 tbsp white vinegar
    • 2 tbsp powdered ranch seasoning
    • pinch of salt
    DIRECTIONS
    1. Preheat oven for 400F, convection setting on.
    2. In a food processor, finely process garlic, onion, celery, carrot, and red bell pepper. Transfer to container and set aside.
    3. Mix, Low Calorie Ranch Sauce ingredients and transfer to squeeze bottle and store in fridge until ready to garnish.
    4. In a pan over medium heat, add olive oil and sauté processed vegetable for about 1-3 minutes or until soft and releasing moisture. Season with salt and pepper and add chicken bouillon paste. Mix until well incorporated into softened vegetable mix. Set aside.
    5. In large bowl or container, mix ground chicken, breadcrumbs, sautéed vegetables, eggs, Chef Ange Base Seasoning - • The ONLY Seasoning Ble... , smoked paprika, Frank’s Red Hot sauce, fresh chopped parsley. Mix lightly until fully mixed. Try to avoid over mixing.
    6. Line a baking sheet with parchment paper and roll meatballs slightly large than a golf ball and place on baking sheet evenly with space between meatballs.
    7. Spray lightly with oil and place in preheated oven for 20-30 minutes or until golden brown.
    8. In a small saucepan oven medium low heat, melt butter and add the remaining Buffalo Sauce ingredients and mix. Cook for 1-2 minute until hot and well mixed.
    9. Remove meatballs from oven when done cooking and let cool for 5 minutes before transferring to a large bowl. Toss gently with buffalo sauce. Arrange on serving platter and garnish with Low Calorie Ranch Sauce, crumbled blue cheese and freshly chopped chives.
