You could polish the inserts to a really high level and get them super nice if you wanted to. When I did the Pinbot install I just got them to the point where I liked the way they looked and they were pretty clear. You could definitely polish them super nice.
You could remove the lettering on the inserts my only reasoning behind sanding down the entire playfield had to do with adhesion of the hard top to the playfield. I took it to the extreme and sprayed it so it was completely level. A lot of folks will just send around the inserts and then install the hard top. It all depends on how much you want to do. There is really no right or wrong way.
