Any guesses as to what spices they added (apart from chili pepper)? I backpacked India for 3 months on the cheap, eating street food all the time and I never got sick... Hot food is safe'ish, but it's the unwashed hands that is the issue. I wouldnt have eaten those raw onions he touched, but hot egg and bread onto foil, probably fine.

They may be poor and food preparation may not be up to international standards some of these commentators below are used to but their whole livelihood depends upon customers especially repeat customers and regulars so they cannot serve contaminated food to people. If a person falls sick from eating their food they will not only lose that customer but word of mouth may harm their business, which they cannot afford. Five star hotels in general don't have regulars in more quantity and they deal with mostly tourists so even if they look clean and neat from the outside they may lack the cleanliness of these street vendors
