In Saigon, everything is freakin' sweet. Need to tone it down. That's why there are so many diabetics nowadays in VN.
Some things I can agree
Sorry to butt in, I saw what you wrote about diabetes. There's a Native Tribe in Chihuahua Mexico who eat a certain type of Maize corn, beans and Squash (3 sisters) and they have one of the lowest % of diabetes in the world. Maybe a Change of diet would help?

@@Mike_MFn_Jones You're right. A change of diet would help but the food is tied into the culture, good luck with that. The thing is that rice is a staple of Vietnam. So it's hard for local people to give that up. On top of the excess of sweetness through seasonings and marinades, plus the che desserts and everything is mainly made out of glutenous rice. Don't get me wrong the food in VN is amazing, but like anything. Everything in moderation is good.

My dad was born and raised in Long Xuyên. When I went to Vietnam this past summer, I spent most of my time visiting my dad's family in Long Xuyên.

Com Tam, I think the place where you used to work for in Saigon is the best. I love the grilled pork ( that charcoal smell) served whole along with all the other sides. That's just comfort food for me.

Don't eat cơm tấm , cơm sườn cọng, ốp la ls better , recomend place is " cơm tấm tùng " cơm tấm is just general name , i like cơm sườn better , and cơm gà ở "cơm hướng dương"

Chúc ăn ngon miệng! Nước mắm with less sugar actually sounds really nice. Having only had Vietnamese food here in Seattle, I haven't really tried any non-Saigon food. And while I love it all, the sweet nước mắm seems to force a "sameness" across all the dishes. I'm really looking forward to experiencing more variety in Vietnam!

Phúc ơi, Chả vàng ở Sài Gòn là tại vì các nhà hàng hà tiện cheap làm chả trứng không có thit. Nếu đúng thì chả phải có thịt , nấm mèo và trứng . Hoặc lag chả tôm cua với trứng. Cái đó chỉ nhà hàng sang trọng đắt tiền mới làm vì rất đắt. Cho nên thường chỉ ở nhà mình thì mới làm vậy thôi, còn các quán nhỏ làm vừa đủ đê bán giá rẽ cho mọi người.

Cơm tấm originated from Long Xuyên. Saigon start the cơm tấm hype around 1994 at the Thuận Kiều plaza 30 years ago.

I live in My Duc Tay and I find on average the food is better in the Delta then Saigon but the verity is not as good, so were to next Chu Doc, as I travel around my area I don1t see many round eyers myself. one day we may cross paths I am Home in Australia for 2 weeks will be back early Jan, I watch you blogs good to see you in the delta.

I thought you need to add fish sauce to banh tam too that would give another flavor. You can ask people around if you don't know what to add to the disk. Banh Tam is not the same as udon noodles, it's softer. Be honest, I don't like udon much.
